Antimicrobial resistance (AMR) is one of the biggest threats against public health in the world. Antimicrobial substances are used within all different sectors and contribute to development of AMR. Global action against irresponsible use of antibiotics and further development of AMR has been of great concern in the last years and risk factors are being pointed out. Low- and middle-income countries (LMICs) have a precarious role in the matter. Insufficient health care systems, poor law enforcement and, high accessibility of over-the-counter drugs (OTCs) are contributing to the unregulated use of antibiotics. Poorly developed surveillance programmes make it hard to correctly analyse the situation of both antimicrobial use (AMU) and AMR. Bangladesh, like its neighbouring countries, faces a lot of challenges regarding public health. One of the major concerns related to public health is access to safe food. Food products can be contaminated with toxins, chemical substances, and microbial organisms, including AMR-bacteria. Furthermore, national programmes for surveillance of AMU and AMR are inadequate. In this study, data from previously done field studies by Bangladesh Livestock Research Institute (BLRI), Bangladesh Food Safety Authority (BFSA), International Livestock Research Institute (ILRI), and International Food Policy Research Institute (IFPRI) and newly collected information from interviews were put together to analyse the AMR situation in Bangladesh. Sampling of food products (tomato, chicken, fish) from traditional markets and supermarkets was done at three locations representing rural, peri-urban, and urban areas from November 2018 to June 2019. Samples were tested for prevalence of Salmonella spp, Escherichia coli, Vibrio cholerae. Samples positive for bacteria were tested for antimicrobial susceptibility through disc diffusion test. As a supplement to the analysis of samples, questionnaires to the vendors of the food products were made to provide background information. During 2020, statistical analysis of previously collected data and interviews with stakeholders working with AMR was made. The interviews aimed to serve as baseline information about current conditions regarding AMU and AMR. 320 cultivations of 1589 (20.1%) were positive for bacterial prevalence. 319 of these were tested for antimicrobial susceptibility where 203 (63.6%) were found to be multidrug-resistant (MDR) (resistant to three or more antibiotic groups). Furthermore, interviews with stakeholders stated that surveillance of AMU and AMR in Bangladesh is inadequate, especially within the animal and agriculture sector, and that a one health approach on a government level is needed to improve the situation. To be able to fully analyse the AMR situation in Bangladesh, a nation-wide study would need to be conducted, within all sectors, including both AMU and AMR testing.

Society is facing significant challenges in transforming to a sustainable food system where healthy food is provided, while reducing the negative environmental impact. Yet, it is debatable whose responsibility it is to provide healthy, environmentally friendly food from sustainable food systems. As food retailers have huge power through their supply and placement, it has been argued that they could steer consumers towards sustainable choices. Shifting from nudging- and sustainability marketing initiatives towards retail led in-store choice restrictions have therefore been suggested to enable a sustainable food system but has not been executed to great extent due to the fear of losing consumers. The aim of the study was to explore consumer understandings of and attitudes towards retail led in-store choice restrictions aiming to reduce the negative environmental and health impacts from food consumption. This was assumed to provide insights regarding where the perceived burden of responsibility lies and in what ways food retailers could be a leverage point for shaping sustainable consumption. The study used a qualitative approach where four semi-structured individual interviews with Axfood, Coop, ICA and WWF as well as four semi-structured focus group interviews with consumers were conducted and continuously integrated with a literature review. A content analysis of the collected empirical data was conducted with the help of the theoretical framework following Kahneman's fast- and slow thinking systems, perceptions, the Functional Theory of Attitudes, nudging, choice editing and different types of paternalism. The results indicated that consumers have diverse attitudes towards paternalistic measures. Food retailers' choice editing strategies aiming to reduce the negative environmental impacts from food consumption were highly encouraged and accepted due to a perceived collectivistic responsibility for maintaining our common earth. On the other hand, food retailers' choice restrictions aiming to reduce the negative health impacts met great disapprovals, due to health limitations being perceived as an insult towards consumers' individual body, identity and liberty. However, eliminations contributing to a greater overall health- and well-being was encouraged only if executed by legitimate and trusted authorities with reasonable, non-profitable driving forces where a democratic society was at the foundation. Choice editing is not an easy strategy for food retailers to apply as it interferes with consumers freedom of choice but is necessary as nudging and sustainability marketing are too soft strategies to steer consumer's often irrational decision-making and will not be enough for a global, sustainable transition. However, food retailers alone cannot bear the responsibility- or be the only leverage point as governmental measures are needed. ; Samhället står inför betydande utmaningar när det gäller att omvandla till hållbara livsmedelssystem där hälsosam mat tillhandahålls, samtidigt som negativ miljöpåverkan minskar. Eftersom dagligvaruhandeln har enorm kraft genom sitt utbud och placering, har det hävdats att de skulle kunna styra konsumenterna mot hållbara val. Syftet med denna studie var att förklara konsumenternas uppfattning om detaljhandelsledda konsumtionsval i butik i syfte att minska de negativa miljö- och hälsoeffekterna av livsmedelskonsumtion. Detta antogs ge insikter om var den upplevda ansvarsbördan låg och på vilka sätt dagligvaruhandeln kan vara en hävstång för att utforma hållbar konsumtion. Studien följde ett kvalitativt tillvägagångssätt där fyra semistrukturerade, individuella intervjuer med representanter från Axfood, Coop, ICA och WWF samt fyra semistrukturerade fokusgruppsintervjuer med konsumenter. De empiriska studierna genomfördes och integrerades kontinuerligt med en litteraturöversikt. En innehållsanalys av den insamlade empiriska datan genomfördes med hjälp av det teoretiska ramverket; Kahnemans snabba och långsamma tänkande, uppfattningar, funktionell teori om attityder, nudging, valredigering och olika typer av paternalism. Resultaten visade att konsumenterna har olika attityder till paternalistiska åtgärder. Dagligvaruhandelns valredigeringsstrategier som syftar till att minska negativ miljöpåverkan från livsmedelskonsumtion uppmuntrades och accepteras på grund av ett kollektivistiskt ansvar för att upprätthålla vår gemensamma jord. Å andra sidan mötte dagligvaruhandelns valredigeringsstrategier som syftar till att minska de negativa hälsoeffekterna stort motstånd, då begränsningar som rör den individuella hälsan anses vara en kränkning mot konsumentens kropp, identitet och frihet. Elimineringar som bidrog till förbättrad hälsa och ett ökat välbefinnande uppmuntrades endast om de utfördes av en legitim och betrodd stat med rimliga, icke-lönsamma drivkrafter där ett demokratiskt samhälle fortfarande bestod. Slutsatsen var att valredigering inte är en lätt strategi för dagligvaruhandeln att tillämpa eftersom det stör konsumenternas valfrihet, men är nödvändig eftersom nudging och hållbarhetsmarknadsföring är för mjuka strategier för att styra konsumentens ofta irrationella beslutsfattande och kommer inte att räcka för en global, hållbar övergång. Dagligvaruhandeln kan dock inte ensam bära ansvaret då statliga åtgärder också behövs.

Corporate Social Responsibility (CSR) is a widely debated concept among academics, practitioners and non-practitioners. By definition, CSR concerns the economic, legal, political, environmental and social responsibilities of a business to its stakeholders and society at large. The conventional view of the role of business in society is to act as a market place and make a profit, in a space where demand meets supply. However, extending the role of CSR to include ethical responsibilities often raises questions of why and how? In this thesis, a qualitative research design was used to examine how businesses, more specifically Swedish food retailers, approach their extended responsibilities in society. The analysis focused in particular on collaborations between retail food businesses and other actors. Food retailers hold a key position in forming a link between producers and consumers in the value chain. They are socially and economically tied to a number of problems facing consumers on local level and in the wider global community, such as climate change, food security and public health. Such problems are often complex and based on value conflicts among various stakeholders, and therefore cannot be resolved in isolation. In conditions of social connectedness, responsibility lies with all actors, with businesses considered to have a privileged position in terms of their negotiating power and ability for collective action. The food retail sector is therefore an interesting empirical setting for studying CSR. In four empirical studies, different CSR activities in Swedish food retailers' approaches to taking responsibility for social, environmental or political issues linked directly or indirectly linked to their operations were scrutinised. These activities included different forms of stakeholder engagement, such as partnership, dialogue or multi-stakeholder initiatives. The results indicated that through CSR, food retailers in collaboration with other actors can co-create value and proactively engage in driving (social) change. Responsibility can thus be viewed as the shared objective of collaborations between businesses, organisations and society at large, rather than being attributable to a single actor.

In the face of climate change, the urgent need for sustainable food systems has brought agroforestry under the spotlight in the Global North, for its provision of ecosystem services. Despite being less known in the Danish and Swedish context, the traditional practice of managing livestock in the semi-natural pastures, similar to the cut-and-carry systems in the tropics, is undeniably a form of agroforestry system. With an agroecological perspective, the study adopted a quantitative statistical analysis, and identified the perceptions of farmers in Denmark and southern Sweden towards temperate agroforestry systems via an online survey. Moreover, the study conducted a qualitative document analysis on grey literatures to review national policies related to agroforestry under the framework of the European Union Common Agricultural Policies (CAP). The connection of motivating and discouraging factors to adopt agroforestry pointed out by the farmers were examined along with the current policies. Farmers' behaviour and attitude were further analyzed by conducting logistic regression modelling to distinguish the tendencies within Danish and Swedish farmers. The results revealed that 'animal health and welfare', 'landscape aesthetics', 'soil erosion', 'microclimate moderation', 'pollination', and 'carbon fixation' were perceived as positive factors by farmers from both Denmark and southern Sweden; while 'administrative burden' and 'regulation' were regarded as hurdles to include trees and bushes on farmlands. The study further identified the practice of organic operations and high diversity of livestock to be common indicators observed amongst farmers' positive attitude towards agroforestry, regardless of the discrepancy between attitude and behaviour amongst Danish farmers. At the policy level, Denmark offered many agroforestry-related financial support schemes, while the similar schemes in Sweden were generally more restricted in practice and options, except for the diverse and detailed schemes for semi-natural pastures. It was thus concluded that the silvopastoral systems had a great potential amongst Danish and Swedish farmers if the density restriction was withdrawn. To establish more agroforestry systems, 'pollination' and 'carbon sequestration' could also be further promoted in both regions, while 'soil conservation' and 'microclimate moderation' should be included in the Swedish financial support schemes. Other suggestions followed the two streams to increase landscape heterogeneity and to have more pollinators, fruits and berries. An interdisciplinary collaboration between agriculture and forestry policy makers, and farmers' participation in the policy-making process were further recommended.
