Es steht der Lebensmittelüberwachung bisher noch keine analytische Methode zur Verfügung, mit der die Herkunft und Authentizität von Pistazien eindeutig bestimmt oder Etikettierungen überprüft werden können. Im weltweiten Pistazienhandel kommt es jedoch immer wieder zu Verfälschungen zwischen Pistazien der drei Hauptproduktionsländer Iran, USA und Türkei. Da Pistazien aus dem Iran und der Türkei häufig mit den hoch krebserzeugenden Aflatoxinen belastetet sind, wird der Verbraucher dadurch nicht nur gemäß §17 des LFGB's getäuscht, sondern evtl. sogar gesundheit-lich gefährdet. Wegen der häufigen Grenzwertüberschreitungen müssen daher iranische und türki-sche Pistazien per Gesetz vor dem Import in die EU auf ihre Aflatoxinbelastung hin untersucht werden. US-amerikanische Pistazien unterliegen dagegen keiner Vorführpflicht. In dieser Arbeit wird nun eine einfache und schnelle Methode vorgestellt, welche mit Hilfe der Kombination aus IRMS-Technik und Diskriminanzanalyse eine eindeutige Authentizitätsbestim-mung von Pistazien aus den drei Hauptproduktionsländern leistet. Hierfür wurden die -Werte der Elemente Kohlenstoff, Stickstoff und Sauerstoff bestimmt und als statistische Variablen eingesetzt. Die verwendeten Messgeräte wurden zuerst über Referenzmaterialien kalibriert und deren Stabilität sowie auch die der verwendeten Arbeitsstandards und des Analyten selber über die Führung von Qualitätsregelkarten geprüft. Die IRMS-Methode wurde dann für alle drei gemessenen Elemente und Fraktionen In-house validiert, um die Verwendbarkeit der Messergebnisse sicherzustellen. Die Wiederholbarkeit (r) und Vergleichbarkeit (R) liegen für die EA-Methoden (13C und 15N) unter 0,6 ‰, während sie für die TC/EA-Methode (18O) aufgrund der Linearitätsprobleme bei diesem Gerät etwas höher sind ( 1,5 ‰). Die flüssige Matrix der Pistazienöle hat sich hierbei als beste Fraktion herausgestellt, weil mit ihr die niedrigsten Standardabweichungen und r-/R-Werte erzielt werden im Vergleich zu den Feststofffraktionen (gemahlene Nuss und entfetteter Rückstand). Der authentische Datensatz von 101 Pistazienproben wurde mit drei verschiedenen Tests auf Aus-reißer untersucht, sowie auch auf Normalverteilung, Varianzhomogenität, Gruppenunterschiede und Korrelation hin analysiert. Mit Hilfe der Hauptkomponentenanalyse konnte gezeigt werden, dass sich die gewählten -Wert-Variablen zur Herkunftsbestimmung grundsätzlich eignen. Eine voll-ständige Trennung drei Länder voneinander wurde mit der Diskriminanzanalyse erreicht und somit ein Klassifizierungsmodell erstellt, mit dem die Herkunft neuer, zweifelhafter oder unbekannter Pistazienproben festgestellt werden kann. Die Überprüfung der Sicherheit mit den drei einschlägi-gen Schätzverfahren (R-, L-, H-Methode) zeigt, dass eine 100 %ig richtige Einordnung der Quasi-Proben mit dem Modell erreicht wird. Eine echte Laboranwendbarkeit ist außerdem gegeben, da die linearen Klassifikationsfunktionen nach Fisher anwendbar sind. Mit 63 weiteren Proben aus dem Handel werden durch Anwendungs-beispiele die Stärken und Schwächen der Methode aufgezeigt. ; Previously there was no established analytical procedure to prove the origin and authenticity of pistachio nuts. A simple, quick method is needed because every batch of Iranian and Turkish pistachios have to be inspected by law for aflatoxin contamination before they are allowed to be imported into the European Union (EU). By contrast, US American pistachio nuts do not have to be checked. Therefore, Iranian pista-chios are repeatedly labelled as being of US American origin to generate higher prices on the world market and to avoid the analytical control at the EU borders. This work presents a fast method to provenance pistachio nuts grown by the three main producer countries: Iran, USA and Turkey. The -values of the elements oxygen, carbon and nitrogen measured by stable isotope ratio mass spectrometry (IRMS) are used as variables for univariate and multivariate statistics. First, the IRMS method was validated in-house for each element and pistachio fraction. The re-peatability (r) and reproducibility (R) for the EA methods are <0.6 ‰ whereas r and R for the TC/EA methods are higher (1.5 ‰) due to the linearity problems of this instrument. Pistachio oil was found to be the best fraction to analyse; its liquid matrix produces the lowest standard deviations and best r- and R-values in comparison with the solid fractions (grinded nut and defat-ted residue). The instruments were calibrated by reference materials prior to sample analysis and the stability of the reference materials, working standards and pistachio nuts were observed by control charts. The dataset of the authentic pistachio samples was examined for outliers by cross-checking with three different tests and then by univariate statistic tests (normality, homogeneity of variance, post-hoc tests of observed means, analysis of correlation) and principal compound analysis be-fore performing discriminant analysis. 25-30 authentic pistachio samples were collected for each country and used to set up the dis-criminant analysis model. This model is able to separate the three countries with 100 % statisti-cal probability (95 % confidence level). 63 further pistachio samples were used to test the strengths and limits of the classification model.

Die vorliegende Arbeit schließt bezüglich der Habichtslehren - die jahrhundertelang praktisch unbeachteten, ersten originären Schriften über die Beizjagd in deutscher Sprache - wichtige Forschungslücken: Zuerst, indem nicht nur die beiden durch Kurt Lindner bekannt gemachten Manuskripte überarbeitet und neu herausgegeben werden, sondern im Besonderen dadurch, dass die Jüngere Habichtslehre - eine in den 1960er Jahren noch unbekannte, zum Verständnis der Genese dieser Traktate jedoch immens wichtige Textstufe - erstmals ediert und ausführlich kommentiert wird. Von Beginn an intendiert war hierbei ein Werk, das nicht nur in indogermanistischer, mediävistischer oder handschriftenkundlicher Sicht Relevanz entfaltet, sondern auch für zeitgenössische Falkner, grundsätzlich an der Kulturtechnik der Beizjagd Interessierte und historisch arbeitende Vogelkundler fruchtbringend nutzbar ist. Somit liegen alle drei deutschen Manuskripte inkl. der Einarbeitung der lateinischen Handschrift L in einem Werk auf dem gegenwärtigen Wissensstand der Forschung vor - schon hier zeichnet sich ein großer Fortschritt in der Erschließung der Primärquellen dieser Zeit ab. Die seit den 1960er Jahren im Raum stehende Forschungsfrage nach der Provenienz dieser Texte innerhalb des deutschen Sprachraums kann im zweiten Teil der Arbeit erstmals schlüssig beantwortet werden. Neben einer umfangreichen und akribischen Auswertung der handschriftlichen Textvertreter hinsichtlich ihrer geographischen Herkunft nach analysierten Sprachmerkmalen wurden auch nicht linguistische Charakteristika - die rezenten Verbreitungsgebiete der beschriebenen Beutevogel - mit in die Argumentation einbezogen, um eine zweite, völlig unabhängige Beweiskette zu erhalten, deren Kombination mit sprachwissenschaftlichen Methoden nur einen Schluss zum Abfassungsraum der Habichtslehren zulässt. Die sehr fruchtbaren Verbindungen kultureller Art, die die Falknerei grundsätzlich auszeichnen, äußern sich besonders in der Vitalität der Falknersprache, einem frühen Zunftidiom, das zahlreiche Einflüsse und Anregungen aus einer Vielzahl von Sprachen und Kulturen aufgenommen hat. Diese umfangreichen Bezüge gebührend auszuloten ist das Anliegen des dritten Hauptteils der Arbeit. Jedes in den Habichtslehren dokumentierte Fachwort wird einer ausführlichen Betrachtung hinsichtlich seiner Bezeugung in den Texten, seines erstens Erscheinens im Deutschen, seiner gegenwärtigen Verwendung, Bedeutung und Etymologie unterzogen. Dabei werden nicht nur vorhandene Deutungen referiert, sondern auch zahlreiche neue Vorschläge der Wortanalyse unterbreitet. Auch in diesem Forschungsbereich steht der sprachwissenschaftliche Befund nicht starr für sich, sondern es werden immer auch die reellen - hier meist ornithologisch-biologischen - Verhältnisse herangezogen, ohne deren Betrachtung viele parallel nebeneinander stehende Interpretationsmöglichkeiten linguistischer Art hatten ungelöst bleiben müssen.

Durch die globale Organisation von Lebensmittelwarenketten steht Konsument*innen heute ein vielfältiges, ganzjährig nahezu gleichbleibendes Angebot an frischem Obst und Gemüse im Lebensmitteleinzelhandel zur Verfügung. Damit einher geht eine erhöhte Komplexität beim Lebensmitteleinkauf und ein verändertes Wissen von Konsument*innen, über die Waren: Das eigene Erfahren der Lebensmittelproduktion ist im Alltag heute nicht mehr möglich. Statt praktischem Wissen gewinnt damit explizites und objektiviertes Wissen über die Waren, z.B. in Form von Siegeln an Bedeutung. Viele Produkt- und Produktionseigenschaften entziehen sich zudem der Kenntnis der Konsument*innen, während gleichzeitig das Bewusstsein für Fragen sozialer und ökologischer Nachhaltigkeit steigt. Die vorliegende Studie geht vor diesem Hintergrund am Beispiel des Einkaufs von frischem Obst und Gemüse der Frage nach, welche Bedeutung die Herkunftsangabe als Hinweis auf die Geographien der Waren für die Bewertung von frischem Obst und Gemüse hat und welches Wissen Konsument*innen über Waren und deren Biographien haben. Es wird zudem aufgezeigt, welche Rolle Nichtwissen beim Lebensmittelkonsum spielt. Die Studie liefert Erkenntnisse für die bislang im deutschsprachigen Raum noch vergleichsweise wenig repräsentierte Konsumgeographie und macht Konzepte aus der Wissens- und Organisationssoziologie für die wirtschaftsgeographische Forschung fruchtbar. Aus einer Praxisperspektive bietet sie Anschlusspunkte für Fragen des nachhaltigen Konsums sowie des Verbraucherschutzes
