Sustainability and the pursuit of happiness are concepts frequently used in the academic community as well as in the ordinary language. It is objectively difficult to define these terms and their characteristics as well as everything that is fashionable and trendy (Bauman, 1998, Globalization. The human consequences. Cambridge, UK: Polity Press; 2005, Liquid life. Cambridge, UK: Polity Press). Tourism applies both phenomena, as many accommodation facilities follow sustainable practices or are inspired by them. Moreover, desire for well-being represents one of the most important needs of the contemporary postmodern society, and it affects many tourists' choices. These features are not always well-balanced in tour operators travel and holiday offers and in the protagonists' experience. Moreover, the economic and global crisis, started in 2008, is causing deep transformations in the consumers' habits and is posing a further element of complexity. With particular reference to Asian contexts of tourism, the article particularly focuses on how the tourism industry has become interested in a 'return to nature', rural themes and related aspects of 'slow tourism'.

L'obiettivo č quello di sviluppare un sistema di servizi che conducano ad un cambiamento nella concezione delle relazioni tra l'agricoltura periurbana e la cittŕ, sviluppando dei networks di alimentazione sostenibile, anche in prospettiva di Expo Milano 2015. L'articolo analizza i risultati della parte qualitativa della ricerca.

AbstractAlternative food networks are organisations of consumers and food producers that oversee and promote the functioning of short food supply chains, with the aim of fostering a direct and local exchange between producers and consumers. New short‐chain economic infrastructures provide food producers – especially small‐scale farmers – with a whole new set of commercial opportunities, directed towards the construction of an alternative food economy. But how does value circulate within these innovative economic platforms? And what values are debated, negotiated and exchanged through these circuits? Employing the analytical lenses of de‐commodification and embeddedness, this article discusses the modalities and outcomes of the processes of value‐creation and value‐appropriation that spring out of the direct exchange occurring between consumers and food producers in the alternative food economy. Based on empirical data collected through extensive qualitative field research in Italy and England, the article exposes the dynamics and limits of the on‐going processes of de‐commodification, proposing an analysis centred on the concept of 'partial' de‐commodification. This conceptual tool is used to assess the differences that emerged between the Italian and English fields, and to provide conclusive remarks about the potential of place‐ and culture‐specific configurations of practices to advance a transformation of the food system.

The book explores, through a reflection on food, the complexity of the concept of well-being. It starts from the consideration that food is a fundamental element for human well-being, and for well-being of the planet as a whole. Not only does food guarantee the survival of human beings, it is also a cultural expression. With regard to the Italian socio-cultural context, the contributors explore how food relates to aspects such as history, tradition, new food styles, health, and the old and new technologies used to produce food. The studies in the book do not simply analyse indicators to illustrate the Italian situation in the "here and now". As part of the tradition of studies on social indicators, they provide valid and well-founded indications to contribute to an improvement in the quality of life for years to come. This work on the theme of food represents a very useful contribution to the general reflection on well-being and its statistical, sociological, and multidisciplinary study, due to the importance historically given to food in Italy and the socio-cultural implications of food in various life contexts.
