The present study investigates the effects of olive oil when used as back fat replacers on the physico-chemical properties, fatty acids, cholesterol and α-tocopherol content of pâté. The replacement of back fat by olive oil at 50 and 100% did not affect the moisture, fat or protein contents, while it increased yellowness. According to texture parameters, reformulated pâté presented lower values for hardness, cohesiveness, gumminess and chewiness. The use of olive oil significantly (P<0.05) affected the fatty acid content. The amount of MUFA increased, while the content of SFA and PUFA decreased as the back fat was replaced by olive oil. The replacement of fat resulted in an improvement in all nutritional indexes. Atherogenic and thrombogenic indexes decreased while the h/H ratio increased with fat replacement. At the same time, the content of α-tocopherol increased and the amount of cholesterol decreased with the addition of olive oil. Therefore, olive oil provides pâté with high levels of C18:1n9c and MUFA, natural antioxidants such as α-tocopherol and reduces cholesterol levels. As a general conclusion, the replacement of back fat by olive oil allows us to obtain a healthier product. ; Este estudio se realizó para investigar el efecto del aceite de oliva como substituto de grasa dorsal sobre las propiedades físico-químicas, ácidos grasos y contenido en colesterol y α-tocoferol de pâté. La substitución de la grasa dorsal por aceite de oliva al 50% y al 100% no afectó al contenido de humedad, grasa y proteína, mientras que incrementó la intensidad de color amarillo. Con respecto a los parámetros de textura, el pâté reformulado presentó una menor dureza, cohesividad, gomosidad y masticabilidad. El uso de aceite de oliva también afectó significativamente al perfil de los ácidos grasos. El contenido de ácidos grasos monoinsaturados incrementó, mientras que el contenido de ácidos grasos saturados y poliinsaturados disminuyó a medida que la grasa dorsal fue reemplazada por aceite de oliva. El reemplazo de la grasa de cerdo mejoró todos los índices nutricionales, disminuyendo los índices aterogénico y trombogénico mientras que aumento el ratio h/H. A su vez, el contenido en α-tocoferol incrementó y la cantidad de colesterol disminuyó con la adición de aceite de oliva. Por tanto, el uso de aceite de oliva nos proporciona un pâté con altos niveles de C18:1n9c y ácidos grasos monoinsaturados, antioxidantes naturales como α-tocoferol y una menor cantidad de colesterol. Seaweeds are a typical food of East-Asian cuisine, to which are alleged several beneficial health effects have been attributed. Their availability and their nutritional and chemical composition have favored the increase in its consumption worldwide, as well as a focus of research due to their bioactive properties. In this regard, seaweed proteins are nutritionally valuable and comprise several specific enzymes, glycoproteins, cell wall-attached proteins, red algae phycobiliproteins, lectins, peptides, or mycosporine-like amino acids. This great extent of molecules has been reported to exert significant antioxidant, antimicrobial, anti-inflammatory, antihypertensive, antidiabetic, or antitumoral properties. Hence, knowledge on algae proteins and derived compounds have gained special interest for the potential nutraceutical, cosmetic or pharmaceutical industries based on these bioactivities. Although several molecular mechanisms of action on how these proteins and peptides exert biological activities have been described, many gaps in knowledge still need to be filled. Updating the current knowledge related to seaweed proteins and peptides is of interest to further asses their potential health benefits. The goal of this study was to compare the growth performance of growing/finishing pigs housed in a hoop barn system and in traditional confinement. A total of twenty Bísaro breed pigs, with 98.6±5.71 days of age, and 25.4±4.87 kg of BW were used (beginning of experiment). The pigs were equally distributed in two groups: Gr1 - hoop barn (3.0 m2/pig) with outdoor access (200 m2/pig); and Gr2 - traditional confinement with straw bedding (1.8 m2/pig). Both groups were fed with the same diet. During the next 98 days' period (growing phase) and until pigs reached approximately 80 kg LW, the animals were fed with a concentrate diet. In the finishing phase consisting of a final 70 days period until slaughter, the animals reached between 110-120 kg LW and were fed with concentrate and cornflour. The feed intake per group was registered daily and growth performances were collected every two weeks. During the growing phase no differences (P > 0.05) were observed in the average daily gain (ADG) between Gr1 (0.546±0.10 kg/day) and Gr2 (0.563±0.05 kg/day). However, a higher variability was observed in hoop barn group (CV of 18.1% vs. 8.8% in confinement). Similar results were observed during the finishing phase with ADG of 0.535±0.09 kg for Gr1 and 0.505±0.07 kg for Gr2 (P > 0.05). In both growing and finishing phases, the feed conversion rates (FCR) were 3.11 on the Gr1 versus 3.12 kg/kg on the Gr2, and 3.44 in Gr1 versus 3.53 in Gr2, respectively. Despite the different housing systems, ADG and FCR per period were identical in both systems.
