Визначено безпечність та якість молока різних молокопереробних підприємств, яке використовується для харчування населення України. Встановлено, що за органолептичними показниками, густиною, кислотністю молока, вмістом жиру, білка, сухого знежиреного залишку, сухої речовини, бактеріального обсіменіння молоко торгових марок «Віта» (ПАТ-ЖЛК «Україна»), «Яготинське» та агропромислового ринку м. Біла Церква Київської області, відповідало вимогам національного стандарту України (ДСТУ 3662:2015). Молоко торгових марок «Віта» (ПАТ-ЖЛК «Україна», «Яготинське» за чистотою молока (кількість механічних домішок), фальсифікацією (домішки води) та забрудненням лужним миючим засобом – до 5% не відповідало вимогам чинного ДСТУ 3662:2015. Вперше застосовано спосіб визначення фальсифікації молока натрію гідрокарбонатом із застосуванням бромкрезолового зеленого (Патент України на корисну модель № 118246; 2017 р.). Вперше застосовано спосіб для визначення кількості соматичних клітин у молоці (наявність субклінічної форми маститу) із застосуванням розчину Reagent N (Австрія) (Патент України на корисну модель № 118247; 2017 р.). Запропоновані способи достовірні (99,2–99,8%), ефективні, експресні, зручні в проведенні, не вимагають витрат на реактиви і можуть використовуватися в комплексі з іншими методами визначення безпечності та якості молока. ; Providing the population with high-quality livestock products is one of the most important tasks of the workers of the agricultural sector of Ukraine, who invest enormous creative energy and considerable funds for the maximum provision of milk and dairy products to the population. Milk refers to essential products and is, along with bread and meat, one of the components of the food security of any country. According to the FAO expert classification, milk belongs to the most valuable foodstuffs of a person, without which it is impossible to cultivate a full-fledged young generation of people. Currently, high-quality and safe milk suitable for the production of high-quality dairy products and baby food products can be produced only by professional dairy farms. Ukraine is implementing the necessary reforms in order to adapt the legal regime for the safety and quality of food products in full compliance with the WTO Agreement «On the Application of Sanitary and Phytosanitary Measures» and simultaneously harmonizes Ukrainian legislation with the requirements of the European Community. In our country there is a regulatory framework regulating the safety and quality of milk. The Law of Ukraine «On Amendments to the Law of Ukraine», «On Milk and Dairy Products» improves the standards of safety and quality of dairy products, envisages that milk, dairy raw materials and dairy products that produce in Ukraine must comply with the safety and quality indicators established normative legal acts of Ukraine. It should be noted that the issue of safety of raw milk is of paramount importance, which in many cases does not correspond to European standards, especially with bacterial insemination. Quality and safety of milk are often unsatisfactory due to insufficiency and poor quality of feed, negligence during milking, storage and transportation, poor condition of milking and refrigeration equipment farms, insufficient supply of means of filtration and disinfection, and the presence of mastitis in cows. Taking into account the above, there is a need for risk analysis in the production of raw milk for the purpose of identifying critical points for the management of milk production as raw materials. The safety and quality of milk of various dairy enterprises, which is used for nutrition of the population of Ukraine, is determined. It was established that according to organoleptic parameters, density, acidity of milk, fat content, protein, dry fat-free residue, dry matter, bacterial insemination of milk of trademarks «Vita» (PAT-ZLK «Ukraine»), «Yagotinsk» and agro-food market of Belaya Church, Kyiv region, complied with the requirements of the current national standard of Ukraine (DSTU 3662:2015). Milk of trademarks «Vita» (PJSC «ZHLK Ukraine», «Yagotinskaya» on the purity of milk (amount of mechanical impurities), falsification – impurities of water and pollution with alkaline detergent – up to 5% did not meet the requirements of the current DSTU 3662:2015. For the first time a method was used to determine the falsification of milk by sodium bicarbonate using bromocresol green (Patent of Ukraine for Utility Model No. 118246; 2017). For the first time, a method was used to determine the number of somatic cells in milk (presence of subclinical mastitis) using a solution of Reagent N (Austria) with alkaline medium (Patent of Ukraine for Utility Model No. 118247, 2017). The proposed methods are reliable (99.2–99.8%), effective, expressive, convenient in carrying out, do not require reagents and can be used in combination with other methods for determining the safety and quality of milk.

In connection with Ukraine's accession to the WTO, the Government has been tasked to take steps to ensure a consistent transition to the new International Requirements for the Safety and Quality of Raw Materials and Foodstuffs, including on animal health control.The purpose of the research was to carry out veterinary-sanitary examination of beef in the conditions of the agro-industrial market, to improve and develop express methods of determination of beef qualities of NOR- and PSE. The following research methods were used: organoleptic, biochemical, physicochemical, microscopic, microbiological, morphological and biometric.It is theoretically substantiated and experimentally confirmed the necessity to carry out veterinary and sanitary evaluation of beef qualities of NOR, PSE and DFD obtained from black-billed bull calves aged 24-27 months after maturation.The optimal quality indicators of beef quality NOR, PSE and DFD were determined. In order to prevent the loss of meat raw materials during processing, as well as in the production of meat products, it is experimentally and theoretically substantiated the need to determine the beef qualities of NOR- and PSE by organoleptic, morphological parameters, as well as by pH and pigment content.Use patented photometric methods for express and effective determination of NOR- and PSE beef in the state veterinary laboratory on the market.It is scientifically substantiated and experimentally proved the expediency of carrying out veterinary and sanitary evaluation of beef of different enterprises of Kyiv region in accordance with the current national standards and normative legal acts of Ukraine.Thus, a reliable quantitative method for determining the total content of pigments in beef qualities of NOR- and PSE along with other methods of determining these qualities (moisture retention capacity, pH, moisture content, organoleptic) is proposed. The method has the advantage over the existing methods of determining beef NOR- and PSE in that the results have a specific, reliable quantitative value.Methodical recommendations "Veterinary-sanitary evaluation of beef using quantitative method for determination of total pigment content in NOR- and PSE-meat of cattle" approved by the Academic Council of the Faculty of Veterinary Medicine of Bilotserkiv National Agrarian University, December 5, 2018 . ; Програмою Кабінету Міністрів України № 14 від 10.01.2002 року «Здоров'я нації» щодо поліпшення стану здоров'я населення, передбачено актуальність наукового обґрунтування ветеринарно-санітарної експертизи продуктів забою тваринництва, особливо за визначенні якості м'яса (NOR, PSE і DFD) відповідно до міжнародних вимог в процесі його сортування в перші години після забою тварин для запобігання його псування під час зберігання.Проведена ветеринарно-санітарна експертиза яловичини в умовах агропромислового ринку за використання органолептичних, фізико-хімічних, біохімічних, мікроскопічних, морфологічних та біометричних методів дослідження. Удосконалені та розроблені експресні методи визначення яловичини якості NOR, PSE та DFD.Теоретично обґрунтовано та експериментально підтверджено необхідність проведення ветеринарно-санітарного оцінювання яловичини NOR, PSE та DFD (отриманої від бичків чорно-рябої породи віком 24–36 місяців) після її дозрівання. Визначено оптимальні показники якості яловичини NOR, PSE та DFD. Для запобігання втрат м'ясної сировини за її обробки та виробництва м'ясних продуктів експериментально і теоретично обґрунтована необхідність визначення яловичини NOR, PSE та DFD за органолептичними, морфологічними показниками, величиною рН і вмістом пігментів. Для експресного та ефективного визначення яловичини NOR і PSE у державній лабораторії ветеринарно-санітарній експертизи на агропродовольчому ринку використовувати запатентовані фотометричні методи визначення якості яловичини, що мають перевагу над існуючими тим, що результати мають конкретне та достовірне кількісне значення.

Гострою залишається проблема, пов'язана з недостатнім рівнем регламентації небезпечних компонентів дезінфікуючих засобів нормативно-правовими актами країн Європейського Союзу.Це обумовлює розробку методичних підходів до прискореного нормування дезінфікуючих засобів і необхідності попередження їх шкідливого впливу на здоров'я людини за застосування відповідно до цільового призначення. Забезпечення базування процедури державної санітарно-епідеміологічної експертизи дезінфекційних засобів на науково-обґрунтованому аналізі ризику. Актуальним залишається наукове обґрунтування програм моніторингу по чутливості збудників інфекційних хвороб до дезінфікуючих засобів і складу діючих речовин в об'єктах навколишнього середовища.«Геоцид» – це рідкий прозорий концентрат, світло-жовтого кольору, піниться під час збовтування, має слабкий специфічний запах, добре розчинний у воді. Робочі розчини антикорозійні але не пошкоджують зафарбовану поверхню будівельних конструкцій, пластмаси і тканини.Полігексаметиленгуанідин гідрохлорид – це речовина, що володіє сильними бактерицидними властивостями. Синтетичний піретроїди – дельтаметрин у процесі обробки забезпечує випаровування речовини препарату, за подальшого охолодження у повітрі утворюється конденсаційний аерозоль. Аерозоль діючої речовини осідає на технологічному обладнанні, стінах приміщення, шкірному покриві тварин і птахів, проникаючи через органи дихання і травлення комах, викликає їх загибель і тим самим надає необхідний інсектицидний ефект. Слід зазначити, що дельтаметрин забезпечує тривалу залишкову дію на обробленій поверхні, що надає йому перевагу над іншими інсектицидами.Препарат є дезінфікуючим засобом, йому властива миюча дія, він може застосовуватися, як для профілактичної, так і вимушеної дезінфекції тваринницьких, птахівничих, торгових і лабораторних приміщень, а також під час дезінфекції інвентарю та обладнання, залізничних вагонів, автотранспорту, об'єктів ветеринарного нагляду. Препарат володіє бактерицидними, вірулецидними, фунгіцидними та інсектицидними властивостями.Досліджено бактерицидну дію комплексного дезінфікуючого препарату «Геоцид» (0,5 % розчин) на основі полігексаметиленгуанідин гідрохлориду (ПГМГ-ГХ), бензалконію хлориду і дельтаметрину. Встановлено, що в присутності білка бактерицидна дія по відношенню до S. aureus знижується в 0,69 раза. Досліджуваний препарат має високу бактерицидністю, по відношенню до S. aureus в 0,5 % концентрації. На гладкій поверхні з плитки висока бактерицидна активність досліджуваного засобу розпочинається з 0,3% концентрації за експозиції 30 хвилин. Вперше встановлено, що новий дезінфікуючий засіб –«Геоцид», в 0,5 % концентрації за експозиції 30 хв, володіє ефективними бактерицидними властивостями, які забезпечують повне знищення атипових мікобактерій – Mycobacterium fortuitum. Note that deltametryn provides long residual effect on the treated surface, which gives it an edge over other insecticides.The drug is a disinfectant, it is inherent in washing performance, it can be used for preventive and forced disinfection of livestock, poultry, commercial and laboratory space, as well as disinfection of tools and equipment, railway cars, vehicles, objects of veterinary supervision. The drug is bactericidal, virucidal, fungicidal and insecticidal properties.Studied bactericidal disinfectant complex drug "Geocid" (0,5 % solution) based in Polyhexamethyleneguanidine hydrochloride (PHMG-GC), benzalkonium chloride and deltametrynu.It is established that the presence of protein bactericidal action with respect to S. aureus is reduced to 0,69 times. The investigational drug is highly bactericidal, on S. aureus in 0,5% concentration. On the smooth surface of the tiles high bactericidal activity of the investigational product starts with a 0,3% concentration for 30 minutes of exposure. For the first time found that a new sanitizer "Geocid" 0,5 % concentration for 30 minutes exposure has effective antibacterial properties that ensure complete destruction of atypical mycobacteria – Mycobacterium fortuitum). Comprehensive disinfectants "Geocid" is a promising drug as a disinfectant.
