Declared as a critical value, how can it become an operational educational approach's goal during a food industry vocational training? The article is based on a collaborative research within the framework of the « Rénovation de la Voie Professionnelle » (French Renovation of the Vocational Path) (2009). The challenge is to study the waysin which a device can be a mean to overcome the paradox often used to think about the process of autonomisation : how can autonomy be stimulated using heteronomous frameworks ?
