Objetivou-se secar polpa de caju em secador de leito de jorro, caracterizar físico-quimicamente os pós produzidos e avaliar o processo de secagem no secador utilizado. A polpa de caju foi adicionada de 10% de maltodextrina e submetida às secagens nas temperaturas de 50, 60 e 70 °C. Os pós produzidos foram analisados quanto ao teor de umidade, açúcares totais, acidez total titulável em ácido cítrico, pH, cinzas, atividade de água e cor, com obtenção dos parâmetros de luminosidade (L*), e cromaticidades a* e b*. Quanto ao processo de secagem foram avaliadas a taxa de remoção do produto (rendimento), a taxa de acúmulo no secador e a taxa de evaporação do leito de jorro. Observou-se que o teor de umidade, a atividade de água e o pH reduziram significativamente com o aumento da temperatura de secagem. Houve concentração das cinzas e aumento significativo nos valores de açúcares totais e acidez total com o aumento da temperatura. A elevação da temperatura de secagem promoveu clareamento significativo nos pós. A taxa de recuperação do produto aumentou com o aumento da temperatura de secagem e a taxa de acumulo diminuiu com a temperatura. A taxa de evaporação não variou. A secagem em leito de jorro é uma boa opção para obtenção da polpa de caju em pó, com melhores resultados dos parâmetros analisados para o pó produzido a 70 °C.

Objective: To analyze the socio-demographic profile of reported hepatitis B and immunization against the disease.
Methods: Study Hepatitis B notification data in the surveillance of a Minas Gerais' municipality, from 2007 to
2015, conducted at the Labor Education Program for Health descriptive and analytical statistics, with significance
level of p0.05). Conclusion: Age, education and gender were not associated
with immunization, vaccination schedule and the HSBsAg test. The absence of vaccination among the notified
suggests need for health education among the population, orienting the possibility of protection by immunization.

The aim of this research was to evaluate the physicochemical, microbiological and bioactive quality of 'Araçá-Boi' pulps exposed to Gamma Irradiation. Manual harvesting was done in the morning, using good agricultural practices, and fruits were packed in thermal boxes and transported to the 'Laboratório de Armazenamento e Processamento de Produtos Agrícolas' of the 'Universidade Federal de Campina Grande', to obtain the pulp. The 'Araçá-Boi' pulp was irradiated in the 'Laboratório de Irradiação Gama do Centro de Desenvolvimento de Tecnologia Nuclear' (CDTN), located at UFPE - Recife, PE, where three doses of Gamma Irradiation (2, 3, 4 kGy) were applied for later comparison with the non-irradiated sample (control). After irradiation, the microbiological, physicochemical parameters and the quantification of vitamin C and flavonoids were evaluated it can be observed that dose 6 is grouped in a set with differential characteristics of the other treatments, as it provided higher AA, pH, luminosity and water activity (Aw). It was observed that there was no microorganism development after irradiation in all analyzed treatments. It can be concluded that the different doses of Gamma Irradiation guaranteed the microbiological quality of the 'Araçá-Boi' pulp, remaining fit for consumption and in compliance with the Brazilian legislation. ; El objetivo de este trabajo fue evaluar la calidad físico-química, microbiológica y bioactiva de las pulpas de 'Araçá-Boi' expuestas a la Irradiación Gama. La recolección manual se realizó por la mañana, utilizando buenas prácticas agrícolas, y las frutas se empacaron en cajas térmicas y se transportaron al 'Laboratório de Armazenamento e Processamento de Produtos Agrícolas' da 'Universidade Federal de Campina Grande', para obtener la pulpa. La pulpa de 'Araçá-Boi' se irradió en el 'Laboratório de Irradiação Gama do Centro de Desenvolvimento de Tecnologia Nuclear' (CDTN), ubicado en UFPE - Recife-PE, donde se aplicaron tres dosis de Irradiación Gama (2, 3, 4 kGy) para una comparación posterior con la muestra no irradiada (control). Después de irradiación, se evaluaron los parámetros microbiológicos, físico-químicos y la cuantificación de la vitamina C y los flavonoides, observando que la dosis 6 se agrupa en un conjunto con características diferenciales de los otros tratamientos, ya que proporciona mayor AA, pH, luminosidad y actividad de agua (Aw). Se observó que no hubo desarrollo de microorganismos después de la irradiación en todos los tratamientos analizados. Após a irradiação, foram avaliados os parâmetros microbiológicos, físico-químicos e a quantificação de vitamina C e flavonóides, observando-se que a dose 6 é agrupada em um conjunto com características diferenciais dos demais tratamentos, pois proporcionou maior AA, pH, luminosidade e atividade de água. Observou-se que não houve desenvolvimento de microrganismos após irradiação em todos os tratamentos analisados. Conclui-se que as diferentes doses de Irradiação Gama garantiram a qualidade microbiológica da polpa de Araçá-Boi, permanecendo aptas ao consumo e em conformidade com a legislação brasileira.

Covid-19 posed several challenges to all organisations in general and to social solidarity cooperatives in particular. However, the challenges faced by these cooperatives have unique features arising from their special characteristics compared to other types of cooperatives. Therefore it is vital to study these challenges and the impacts of covid-19. This study has as main goal to understand those challenges and their impact. An exploratory study was undertaken by applying 11 interviews to 11 social solidarity cooperatives. The cooperatives were chosen to be heterogeneous among the existent cooperatives in Portugal. This study corresponds to the first phase of a project that is still underway. This article presents the main results of the content analysis of the data collected from the interviews. Data show cooperatives could promptly adapt and continue their mission under pressure from the pandemic despite the first difficulties encountered in a new and unknown situation, showing a capacity to adapt and serve their members. However, these members were also submitted to several increasing and new challenges. The adaptations were possible due to legal changes in the work organisation law, from layoff to telework, government support involving financial programs, VAT, and other tax relaxation, as well as due to human resources reorganisation and the cooperatives' staff positive attitude towards the difficulties (both leaders and general workers). Differences between the social solidarity cooperatives under study concerning digital technologies showed that those already having some infrastructure had minor adapting difficulties. ; La covid-19 planteó varios retos a todas las organizaciones en general y, especialmente, a las cooperativas de solidaridad social. Fagopyrum esculentum is highly nutritious due to its proteins of high biological value and high fiber content. Its most relevant property is nonetheless its antioxidant activity, provided by the presence of flavonoids. It is an important pseudocereal in agriculture, animal production, and human food. The objective of study was to evaluate the grain yield and flavonoid production of Fagopyrum esculentum cultivars as a function of base saturation. The experiment was carried out in a greenhouse, in a completely randomized design with four replicates. Treatments were represented by cultivars IPR 91 and IPR 92 and five base saturation levels (9, 31, 53, 75, and 97 %), in a factorial arrangement (2 × 5). Agronomic attributes and total-flavonoid and rutin contents and production were evaluated. Subsequently, the data were subjected to statistical analysis. Base saturation does not affect flavonoid production. However, base saturation influences shoot dry matter yield (maximum at 62.0% base saturation) and grain yield (maximum at 9.00%) in IPR 92. The higher-yielding cultivar is IPR 92. This is the first scientific report of base saturation in the species.
