The structural isolation of nutrition from the human right to food has resulted in the technicalization and medicalization of the meaning and practice of nutrition, including in the field of nutritional assessments, which has led to the construction of public policies that lack a holistic perspective with a rights-based approach. Two main categories of nutritional assessments have been anthropometric measurements and nutritional profiles evident in the WHO and PAHO proposals related to the nutrition of children. In this paper, we present a critical discussion on the production and uses of both instruments in the evaluation of the growth and development of children and in the generation of global recommendations in public health with the objective of proposing alternatives for the measurement of malnutrition in communities affected by violations of the human right to food and nutrition. Our approach focuses on the construction not only based on the calorie-energy needs of the human body but also on food as a social, cultural and political process. It thus becomes an invitation to rethink nutrition from the notion of right to food to the implementation of research from participatory action.

La 4e de couv. indique : "Depuis plus d'un siècle, des diasporas d'origine arabe établies en Amérique latine maintiennent les échanges entre ce continent et différents pays du Proche-Orient. L'histoire et la sociologie des migrations étudient ceux qu'autrefois on appelait « Turcos » - car ils venaient de l'Empire ottoman - et leurs façons de s'intégrer dans les pays d'accueil sans renier leurs cultures d'origine. Les soulèvements arabes de 2011 ont eu un vif écho en Amérique latine et ont ranimé des interrogations plus anciennes, liées à la guerre en Palestine et aux interventions américaines en Irak puis à la guerre en Syrie. Intérêts économiques et échanges pétroliers avaient déjà poussé certains États des deux continents à coopérer. Certaines tendances à la gouvernance autoritaire aussi. Au plan social et culturel, une curiosité nouvelle se manifeste en Amérique latine pour les racines ethnico-linguistiques et religieuses, contribuant à créer une effervescence identitaire autour des « origines » et de leurs significations culturelles et politiques. Les recherches présentées par les contributeurs de ce livre ont été menées en Colombie, au Mexique, en Argentine et au Proche-Orient. Elles ont été confrontées à Mexico au cours de la Semana Arabe du Collegio de Mexico, à Buenos-Aires, dans le cadre des études sur les « aires culturelles » de l'ALADAA. À Aix-en-Provence, enfin, une journée d'études de ce programme, accueilli par l'Institut d'études politiques et par IREMAM, a servi de matrice au présent volume, qui dresse une cartographie tout en nuances de ces échanges
