Three experiments were conducted with the objective of evaluating the effects of supplementation (concentrate or mineral supplementation), supplementation strategy (continuous or strategic supplementation) and gender class on the ingestive and diurnal behaviour of grazing beef cattle. To evaluate the effect of the supplementation (Experiment 1) and the gender class (Experiment 3) on their diurnal behaviour, behaviour visualisations were performed by two people at observation stations outside the picket area with the aid of binoculars. The animal behaviour was classified as: supplement intake, grazing, water intake, standing ruminating, standing idle, lying ruminating, lying idle and walking. To evaluate the effect of the supplementation strategy on the ingestive behaviour of the supplement (Experiment 2), refusals of the supplement were weighed for six consecutive days at different times (20, 40, 60, 90, 120, 180, 240, 480 and 1,440 minutes) after the concentrate was supplied. The intake of concentrate per animal, at each observation time, was calculated by subtracting the weight of the scraps at that time from the total weight of the batch of supplement provided on the day, and dividing the result by the number of animals in each batch. Finally, a logistic model was adjusted for each treatment. A 10% significance level was adopted for all statistical procedures. Concentrate supplementation reduced the time that the animals spent grazing. The continuous supplementation strategy affected the uniformity of the supplement intake speed, without affecting the average speed or the total supplement intake. The gender class of the animals also influenced their diurnal behaviour, castrated males spent more time lying, compared to females. The specificities of cattle behaviour should be considered when delineating the supplementation of grazing cattle, since the type of supplement, previous supplementation and gender class interfere with their behaviour.

<p>O objetivo do trabalho foi avaliar o efeito do fornecimento de diferentes quantidades de suplementos múltiplos sobre as características nutricionais e desempenho produtivo de novilhas durante a fase de recria em pastagens com <em>Urochloa decumbens </em>no período de transição seca-águas. Foram utilizadas 24 novilhas com idade e peso médio inicial de 11 meses e 243±3 kg, respectivamente. O delineamento foi inteiramente casualizado com quatro tratamentos e seis repetições. Utilizou-se um suplemento com 25% de PB. Os tratamentos consistiam em quatro quantidades de suplementos: 0; 0,5; 1,0 e 1,5 kg respectivamente. Os animais dos diferentes tratamentos receberam mistura mineral <em>ad libitum</em>. Observou-se efeito linear positivo (P&lt;0,10) no GMD e peso corporal final (PCF) com as quantidades de suplementos. Foi verificado efeito linear crescente (P&lt;0,10) no consumo de MS, MO, PB, EE, CNF e NDT com o fornecimento de maiores quantidades de suplemento; efeito não apresentado no consumo de FDNcp. Evidenciou-se efeito cúbico (P&lt;0,10) sobre a digestibilidade aparente da MO, PB, FDNcp, CNF e concentração de NDT entre as quantidades de suplementos múltiplos. As quantidades de suplementos aumentaram (P&lt;0,10) o coeficiente de digestibilidade do EE. Verificou-se comportamento linear crescente (P&lt;0,10) sobre a excreção urinária de nitrogênio uréico (NUU), nitrogênio uréico no soro (NUS) e fluxo de compostos nitrogenados microbianos (NMIC) com as quantidades de suplementos. Não foi observada diferença (P&lt;0,10) das quantidades de suplementação sobre a eficiência de síntese microbiana. As quantidades de suplementos afetaram de forma linear decrescente (P&lt;0,10) o NMICR. Conclui-se que o fornecimento de maiores quantidades de suplementos múltiplos durante a época de transição seca-águas melhora o desempenho produtivo e características nutricionais de novilhas de corte criadas em pastagens.</p>

<p>Objetivou-se avaliar o efeito da substituição do farelo de soja pelo farelo de algodão em suplementos múltiplos sobre as características nutricionais e desempenho produtivo de novilhas de corte em fase de recria em pastagens de <em>Brachiaria decumbens </em>no período da seca. Foram utilizadas 24 novilhas de corte nelore com idade e peso médio inicial de 8 meses e 210±6 kg, respectivamente. O delineamento foi inteiramente casualizado com quatro tratamentos e seis repetições. Os suplementos continham aproximadamente 30% de proteína bruta (PB) e substituição progressiva do farelo de soja pelo farelo de algodão em 0, 50 e 100%. Aos animais do tratamento controle foi fornecida apenas mistura mineral <em>ad libitum </em>e aos demais tratamentos foram fornecidos 1,0 kg/animal/dia de suplemento. Não houve diferença de GMD entre os animais suplementados e os animais controle (P&gt;0,10). A suplementação aumentou apenas o consumo de proteína bruta (PB) (P&lt;0,10). O nível de substituição de farelo de soja pelo farelo de algodão não afetou (P&gt;0,10) o consumo nos animais suplementados. A suplementação ampliou os coeficientes de digestibilidade aparente (P&lt;0,10) da MO, PB, CFN e NDT com exceção do EE e da FDNcp (P&gt;0,10). Observou-se efeito linear positivo (P&lt;0,10) do nível de substituição de farelo de soja pelo farelo de algodão sobre a digestibilidade da MO, CNF e NDT. Houve efeito da suplementação e do nível de substituição (P&lt;0,10) sobre o teor de nitrogênio ureico no soro e nitrogênio ureico na urina. Não houve efeito da suplementação e do nível de substituição sobre o fluxo de nitrogênio microbiano ao intestino (NMIC) e eficiência de síntese de proteína microbiana (EFM) (P&gt;0,10). Foi verificado efeito linear decrescente (P&lt;0,10) da substituição sobre a relação nitrogênio microbiano/ nitrogênio ingerido (NMICR). Conclui-se que a substituição do farelo de soja pelo farelo de algodão em suplementos múltiplos durante a época seca não prejudica o desempenho produtivo de novilhas de corte.</p>

The study of the influence of delay in evisceration on microbial count in bovine carcasses under tropical conditions is of utmost importance for the food industry and public health. Evisceration is a critical stage in meat processing, and any delay in this process can lead to favorable conditions for the growth and multiplication of pathogenic microorganisms. The precautionary principle is employed to ensure a high standard of protection for consumer health in the food sector, especially when a strong scientific basis for legislation is lacking. The objective was to evaluate the influence of delayed evisceration on the microbial count of bovine carcasses. 90 carcasses were sampled, eviscerated at 30 (control), 60, 90, 120, 150 and 180 minutes after bleeding, at an average temperature of 26.8 ºC (or 80.24 ºF). External and internal surface swabs were collected to count mesophiles and generic Escherichia coli. No sample exceeded safe limits for fresh consumption. The internal and external surface mesophilic count was higher compared to the control only with 180 min. The highest frequency of E. coli also occurred at 180 min. and was higher on the inner surface than on the outer surface, indicating the importance of sampling this surface in cases of delayed evisceration. The dilatation of the rumen by gases markedly made evisceration difficult after 150 min. Microbiological analyzes are important to evaluate each case, but it is not recommended to exceed 180 min. for removal of the viscera, under the mentioned temperature.

ResumoO estudo da influência do atraso na evisceração na contagem microbiana em carcaças bovinas em condições tropicais é de extrema importância para a indústria alimentícia e a saúde pública. A evisceração é uma etapa crítica no processamento da carne, e qualquer atraso nesse processo pode criar condições favoráveis para o crescimento e multiplicação de microrganismos patogênicos. O princípio da precaução é empregado para garantir um alto padrão de proteção para a saúde dos consumidores no setor alimentício, especialmente quando a legislação carece de uma sólida base científica. O objetivo foi avaliar a influência da evisceração retardada na contagem microbiana de carcaças bovinas. Foram amostradas 90 carcaças, evisceradas aos 30 (controle), 60, 90, 120, 150 e 180 minutos após a sangria, em temperatura média de 26,8 ºC (ou 80,24 ºF). Swabs da superfície externa e interna foram coletados para contagem de mesófilos e Escherichia coli genérica. Nenhuma amostra excedeu os limites seguros para consumo fresco. A contagem de mesófilos de superfície interna e externa foi maior em comparação com o controle apenas com 180 min. A maior frequência de E. coli também ocorreu aos 180 min. e foi maior na superfície interna do que na externa, indicando a importância da amostragem dessa superfície em casos de evisceração tardia. A dilatação do rúmen por gases dificultou acentuadamente a evisceração após 150 min. As análises microbiológicas são importantes para avaliar cada caso, mas não é recomendado ultrapassar 180 min. para retirada das vísceras, sob a temperatura mencionada.

The aim of this study was to evaluate the effect of different energy sources - corn, sorghum, and wheat bran - on performance, intake, digestibility, and nitrogen utilization efficiency of beef calves subjected to creep feeding. Thirty-four calves (12 males and 22 females) with initial age and weight of four months and 108±3.9 kg, respectively, were used in a randomized-block experimental design with four treatments and two blocks (males and females). Treatments were control (MM), a mineral mixture ad libitum; corn (C); corn + sorghum (C+S); and corn + sorghum + wheat bran (C+S+WB). Supplements contained approximately 20% crude protein (CP), and were fed in the amount of 0.5% of body weight. Supplemented animals had higher performance (P &lt; 0.05) when compared with those on treatment MM. Supplementation increased (P &lt; 0.05) the intakes of dry matter (DM), organic matter (OM), crude protein (CP), neutral detergent fiber corrected for ash and protein (NDFap), non-fibrous carbohydrates (NFC), digestible neutral detergent fiber (dNDF), and digestible organic matter (dOM). The digestibility of NFC was higher (P &lt; 0.05) in the supplemented treatments. The C+S and C+S+WB treatments provided increased digestibility (P &lt; 0.05) of OM, CP, and NDFap. The synthesis of nitrogen compounds was higher (P &lt; 0.05) in animals on treatment C as compared with those on the other supplemented treatments. Animals on treatments C+S and C+S+WB had higher (P &lt; 0.05) nitrogen utilization efficiency compared with those on the other treatments. Concentrate supplementation improved the animal performance. The use of other energy sources (sorghum or wheat bran) in association with corn is recommended for suckling calves.

This study aimed to evaluate the effect of replacing soybean meal with soybean in multiple supplements on nutritional parameters, microbial efficiency and productive and reproductive performance of heifers grazing in Urochloa decumbens during the drought period. Were used 39 crossbred heifers of initial age and initial weight of 21 months and 309.5±7 kg, respectively. The experimental design was completely randomized with four treatments with eight replicates, and a control treatment with seven replications. Two treatments had soybean meal as the protein source and two treatments had soybean as the protein source, containing 25% and 40% crude protein. The amount of supplement offered was 1.0 kg/animal/day. The animals of the control group received only mineral salt ad libitum. The supplemented animals had higher average daily gain (ADG) than control animals (P<0.10), and there was no difference in ADG among the supplements (P>0.10). There was an effect of supplementation (P <0.10) on intake of dry matter (DM), organic matter (OM), crude protein (CP), ether extract (EE), non-fiber carbohydrates (NFC), total digestible nutrients (TDN) and neutral detergent fiber corrected for ash and protein (NDF). There were no differences (P>0.10) on intake of OM and DM grazing between the supplemented and non-supplemented. Supplementation improved DM digestibility and all constituents of the diet (P<0.10). It was found that the provision of multiple supplements optimizes the performance of heifers grazing during the dry season, and that the substitution of soybean meal by soybean did not improve productive performance of animals
