ABSTRACT:This article investigates the emergence of the Copenhagen slaughterhouse, called the Meat City, during the late nineteenth century. This slaughterhouse was a product of a number of heterogeneous components: industrialization and new infrastructures were important, but hygiene and the significance of Danish bacon exports also played a key role. In the Meat City, this created a distinction between rising production and consumption on the one hand, and the isolation and closure of the slaughtering facility on the other. This friction mirrored an ambivalent attitude towards meat in the urban space: one where consumers demanded more meat than ever before, while animals were being removed from the public eye. These contradictions, it is argued, illustrate and underline the change of the city towards a 'post-domestic' culture. The article employs a variety of sources, but primarily the Copenhagen Municipal Archives for regulation of meat provision.

English abstract: How can we approach the interaction between body and city as political? This article moves through a sequence of cases in which bodies - groups, crowds, or swarms of people - have affected the public space of Copenhagen around 1900. First, election day is investigated for its contradictory spectacle of the public egalitarian crowd and the singular subject of the secret ballot. The analysis then turns to political marches of the period, considering the way participants in these marches produced and appropriated their routes during the intensified political tensions of the 1880s and 1890s. The strange phenomenon of New Year riots at City Hall Square and the anarchist attack on the Stock Exchange, as the final examples, serve to show a pattern of bodily agency, on a scale from the least to the most contested crowdings. In this way, the article seeks to locate the body in the discussion of public space in cultural history that has for some time been focusing on materiality.

For urban historians interested in food provisioning, meat represents a critical juncture because no other food item was so deeply and, in so many ways, tied to urban modernity. This introduction outlines five central themes of the urban meat nexus: city and country relations, geography and urban space, technology and infrastructure, government and regulation, and changing nutritional standards. The four articles speak to these larger issues in specific and novel ways. They advance the existing scholarship by opening up new questions and approaches, focusing on hitherto understudied locations, while also collectively covering the entire spectrum of meat provisioning from supply hinterlands to urban consumption.

AbstractTaking its cue from the 'material turn' of recent years, this survey examines the connections between infrastructure, welfare and citizenship in north European cities in the later nineteenth and twentieth centuries. It argues that connections between these different constructs were fundamental not only to how cities functioned but how citizens themselves were imagined. As such, the survey critiques histories of welfare and citizenship that foreground the national and neglect the urban origins of the modern state. It does so by examining infrastructure, welfare and citizenship in smaller European nation-states such as Belgium, Denmark and Ireland rather than in the more familiar cases of Germany, France and Britain. Asking questions about the inter-relationship of infrastructure, welfare and citizenship, the survey suggests, offers an important way to reinterpret what the 'modern city' meant in twentieth-century northern Europe.
