ZusammenfassungIn Alexander von Humboldts Tagebüchern seiner berühmten Forschungsreise durch Spanisch-Amerika finden sich Bemerkungen und Hinweise für künftige Leser seiner Reisedarstellungen zu Problemen der Verpflegung. Zumeist werden Engpässe und Missstände erwähnt sowie Fragen soziopolitischer Situation verdeutlicht. Sie beziehen sich auf Extrembedingungen in stadtfernen Gebieten und im Kontakt mit den indigenen Trägern und Helfern während der einzelnen Exkursionen. Die Darstellungen der alltäglichen Gegebenheiten sind zugleich eine interessante Quelle für Verhaltensmuster der verschiedenen Schichten der spanischkolonialen Gesellschaft wie der Forschungsreisenden, die mit den Schwierigkeiten umzugehen hatten, sich anzupassen verstanden oder ihre eigenen Verhaltensmuster entwickelt haben. Damit ermöglichen Humboldts Aufzeichnungen zugleich auch auf diesem Gebiet manchen Blick auf den seither erfolgten Kulturwandel. En la mayoría de los casos Humboldt menciona situaciones precarias o ilustra cuestiones de carácter sociopolítico. Frecuentemente, sus apuntes se refieren a condiciones extremas en regiones remotas y en contacto con los cargadores y ayudantes indígenas durante las diferentes excursiones. Las descripciones de los acontecimientos cotidianos al mismo tiempo son una fuente interesante sobre los modos de proceder de las diferentes capas de la sociedad colonial española así como de los viajeros científicos que tuvieron que enfrentar dificultades a las cuales había que adaptarse o desarrollar modelos propios de comportamiento. Por esto al mismo tiempo las noticias de Humboldt también en este asunto posibilitan más de una vez la atención al cambio cultural que se ha realizado hasta hoy en día. Entre los zapotecas del período precolonial la higiene y la medicina tenían formas semejantes a los otros pueblos mesoamericanos. En el tiempo de la Conquista española existió un grupo especial de curanderos que pertenecían a la élite dominante como miembros del sacerdocio. En relación muy estrecha con rituales y conocimientos calendáricos se valían de su saber secreto, tratando a enfermos y cuidando a preñadas. Como resultado de la política de subyugación por parte del régimen colonial y de las actividades de los misioneros, varios de esos conocimientos se perdieron. Pero eran los mismos funcionarios de la administración colonial y los misioneros que trataban de recolectar informaciones sobre higiene y medicina tradicionales. Las antiguas prácticas de curaciones forman parte de las raíces de la medicina popular entre los zapotecas de hoy en día, que son dignas de atención. ; Hygiene and medicine of the Zapotecs of the pre-colonial period did not differ much from those of other Mesoamerican peoples. At the time of the Spanish Conquest there was a dominant group of specialized healers who, as members of the priesthood, formed part of the elite. They used their secret traditions essentially related to ritual and calendrical knowledge for the curing of sick persons and care of pregnant women. As a result of the colonial politics of subjugation and of the practices and strategies of missionary priests, parts of this medical tradition were lost. But at the same time colonial officials and missionaries collected informations about traditional hygiene and medicine. The old healing practices today are part of the traditional Zapotec medicine which is worth of scholar's attention.

Sowohl im Hochgebirge wie auch in den küstennahen Trockengebieten waren die Methoden intensiven Bodenbaus in Verbindung mit Viehhaltung seit langem entwickelt. Ihren Verfall unter den veränderten Bedürfnissen der Kolonialgesellschaft vermochte auch die Reglementierung der Wassernutzung gemäß dem althergebrachten Mita-System nicht aufzuhalten

La higiene y medicina entre los Zapoteca en tiempos de la conquista espanola fue caracterizada por la existencia de ciertos curanderos que, como grupo especial del sacerdocio, fueron parte de la clase dominante. Sus conocimientos fueron utilizados en las curaciones asi como en la atencion de las prenadas. Como resultado de la politica de opresion por parte de la administracion colonial y los misioneros, los antiguos conocimientos y experiencias se perdieron o fueron transmitidos clandestinamente por las generaciones indigenas hasta formar hoy en dia el fundamento de sus practicas curativas
