Abstract Brazil is one of the largest producers of beef. It also produces and markets the most expensive zebus (Bos taurus indicus) in the world. In sumptuous auctions, which offer an abundant amount of food and drink to the participants, elite cattle are sold for millionaire prices. This article, aims to analyse this market through an ethnography of a cattle auction in the state of Minas Gerais: the set of exchanges that produce race and pedigree, value, and reputations and the socdes and substances that link men and cattle.
Coalho cheese is a typical Northeastern Brazilian food whose production and consumption has expanded considerably to other regions of the country. Despite its cultural and socioeconomic relevance, coalho cheese still has a negative reputation due to problems in its physicochemical and microbiological quality standards, especially when it is produced artisanally. For this reason, many researchers have been looking for alternatives to improve the quality and the notoriety of this product, such as the application of probiotic strains to inhibit pathogens. However, in addition to the research related to the desired probiotic properties and the safety of strains for food application, it is important to know the possible changes in the food matrix caused by this intervention. In this context, the aim of this study was to evaluate the effect of the incorporation of probiotic strains of Enterococcus faecium on the physicochemical and sensory characteristics of coalho cheese. The cheeses were made with pasteurized cow milk and probiotic strains of E. faecium were added during production. Cheeses were also made without adding the strains, and considered as control cheeses. The final products were evaluated for moisture, pH, titratable acidity, total carbohydrates, proteins, lipids, ash, color, organic acid profile, and sensory attributes. In addition, viable lactic acid bacteria were also assessed. Coalho cheeses containing E. faecium showed higher titratable acidity and lower pH. In addition, there was a reduction in the carbohydrate content, which was attributed to lactose degradation. The organic acid profile also varied, as highlighted by the increase in the concentration of lactic acid by a factor of 3.5, and by the absence of citric acid as a possible result of the metabolism of E. faecium in the production of aromatic compounds. There was no variation in the color or sensory acceptance of the cheeses. Therefore, the application of probiotic strains of E. faecium in coalho cheese production changes some physicochemical characteristics while maintaining essential properties, such as the color and sensory acceptability of the final product.
This study aimed to assess the growth performance and nutritional status of sheep under intermittent water supply by means of performance, intake, apparent digestibility of nutrients, water balance and nitrogen. Thirty-two intact male sheep (20.7 ± 2.63 kg, 8 months of age) were distributed in a completely randomized design with 4 water supply intervals via drinking trough (0h00, 24h00, 48h00, and 72h00), with 8 replicates. The extension in the water restriction period caused a reduction in the intake of dry matter, crude protein, neutral detergent fiber, digestible energy, and metabolizable energy (P < 0.05). The digestibility coefficients of dry matter, crude protein, and neutral detergent fiber showed a linear decrease with increasing periods of water restriction (P < 0.05). Water intake via food, total water intake, and water excretion via feces showed a linear increase in response to an increase in the water supply interval (P < 0.05). Water intake via drinking, metabolic water, total water excretion and water balance presented a linear decrease, with increasing periods of water restriction (P < 0.05). Nitrogen intake and absorbed nitrogen were influenced by water restriction, presenting a linear decreasing trend according to water supply periods (P < 0.05). Final weight, daily weight gain, and total weight gain, were influenced by the periods of water restriction, showing a linear reduction (P < 0.05). Feed conversion increased as the water restriction period increased (P=0.004). Intermittent water supply at intervals of up to 72h00 reduced nutrient intake and digestibility, resulting in a decrease in weight gain of the studied animals.
Goat and sheep farming in Brazil relies on an expressive herd, especially in the Northeast region of the country, where small ruminants constitute a relevant economic activity, with milk production being an important source of income in some dry areas of the Northeastern states. However, there are still some sanitary problems in the management of dairy goats, among which mastitis is highlighted, especially that of the subclinical type. Therefore, the aim of this study was to evaluate the use of antibiotics, exclusively or in combination with vaccines, in the control of sub-clinical mastitis in small ruminants. The study was conducted on a rural property located in Santa Maria da Boa Vista-PE. Fifty-three female Saanen dairy goats were allocated into four experimental groups. An antibiotic therapy with a commercial antimicrobial based on cloxacillin was used in group 1. Group 2 received the commercial vaccine indicated for herds with an incidence of Staphylococcus strains and the same antibiotic described for Group 1. Group 3 was evaluated for the exclusive use of vaccination, and Group 4 was the control group. A microbiological examination of the milk was carried out to confirm cases of mastitis. The percentage of udders, infected by coagulase-negative Staphylococcus spp. (CNS) before and after the antibiotic + vaccine treatment was 42.8 and 7.1%, respectively. It was observed that the cloxacillin-based antibiotic could be used alone or in combination with mastitis vaccines to control staphylococcal mastitis in small ruminants. Vaccination alone was not effective in reducing the number of mastitis cases; therefore, a cross reaction against CNS was not observed. Thus, further studies to determine the potential of vaccines to control sub-clinical mastitis in small ruminants are necessary.
Toxoplasma gondii and Neospora spp. are important apicomplexan pathogens that can infect dogs and result in a neurological syndrome. The aim of this study was to evaluate the seroprevalence of T. gondii and Neospora spp. in stray dogs in the state of Rondônia, Brazil. A cross-sectional study was conducted from June 2014 to April 2016. A total of 458 dogs blood samples were collected at the Center for Control of Zoonosis (CCZ), and anti-T. gondii and anti-N. spp. antibody levels were detected and measured using indirect fluorescent antibody test (IFAT). The seroprevalence of T. gondii and Neospora spp. in dogs it was 82.20% and 73.85%, respectively. The seroprevalence of coinfections was 47.59%. This is the first report of anti-T. gondii and anti-Neospora spp. antibodies detected in stray dogs in Rolim de Moura, state of Rondônia, Western Brazilian Amazon. Male dogs showed a higher frequency of anti-T. gondii antibodies than female dogs (88.0% vs. 75.3%; p < 0.001), presenting 2.41 times more chances of having the disease. High seroprevalence of infection (92.4%: T. gondii and 89.2%: Neospora spp.) was detected in the group ≥ 1-year-old dogs, in all collections, with OR 7.35 and OR 10.27 for the presence of anti-T. gondii and anti- Neospora spp., respectively. In conclusion, the serological results indicate an important circulation of T. gondii and Neospora spp. in wandering dogs hailing from Rolim de Moura, state of Rondônia, Western Brazilian Amazonia.
The objective of the present study was to evaluate the productive performance and nutritional value of forage of wheat and triticale cultivars at different harvest times in the semiarid region of Minas Gerais. Eight wheat cultivars and two triticale cultivars harvested at three stages of plant development were evaluated: Rubberization, grain at the stage of soft mass and harvest maturation. The experimental design adopted was a randomized block in a factorial scheme 10 × 3, with three replicates, 10 cultivars and 3 developmental stages for plant collection. The main agronomic characteristics and nutritional value were evaluated of forage of the cultivars under study. The study demonstrated the potential of wheat and triticale cultivation for forage in the semiarid region of Minas Gerais. The mean dry matter yield of wheat cultivars was 5.90 t ha-1, 7.85 t ha-1 and 7.98 t ha-1 and triticale 6.47 t ha-1, 9.97 t ha-1 and 10.5 t ha-1 for the rubber harvesting stages, grain at the stage of soft mass and harvest maturation, respectively. For the average crude protein content, the wheat cultivars showed 15.07%, 9.13%, 10.60% and the triticale cultivars showed 14.4%, 9.31% and 10.05% for the harvest stages of rubber formation, grain at the stage of soft mass and harvest maturation, respectively. When evaluating the average levels of total digestible nutrients, the wheat and triticale cultivars showed an average of 48.90% and 48.67% in the rubber harvesting stage and 42.68% and 49.60% in the grain in the mass stage suave and 44.43% and 42.90% at harvest maturation. The highest yield of digestible dry matter was observed with the cultivars harvested at the grain stage at the soft mass stage. Triticale IPR 111 and Wheat IPR PANATY had greater productive potential and better nutritional quality for use as forage.
The aim of this study was to examine the use of antioxidants on the oxidative stability of poultry offal oil used in the pet food industry. Five commercial synthetic and two natural antioxidants were used in the following treatments: Control (CON); CON + (BHT + BHA + ETH95); CON + (BHT + BHA); CON + (BHA + PG + CA); CON + (BHT + BHA + ETH70); CON + BHA; CON + (ASC + rosemary); and CON + (ASC + tocopherols). Inclusion levels were 0.5% for the synthetic and 0.625% for the natural antioxidants. Oxidative stability was determined at three temperatures (90, 110 and 130 ºC). To determine the fatty acid profile, the original sample of the offal oil was considered a negative control. The fatty acids were determined based on the preparation of methyl esters by a transesterification reaction with methanol in alkaline medium, followed by gas chromatography analysis. The different fatty acid types were identified by comparing the retention times of the fatty acid methyl ester standards with the retention times of the observed peaks. Compositional data analysis was carried out. Without the use of antioxidant, induction time is shorter, resulting in lower oxidative stability of the offal oil and consequent loss of its quality due to less time taken to oxidize. The antioxidants used in CON + (BHT + BHA + ETH95), CON + (BHA + PG + CA) and CON + BHA better preserved the essential fatty acids (linolenic and linoleic). Natural antioxidants exhibited higher oxidation, with higher proportions of saturated fatty acids and the worst ω6:ω3 ratios. In conclusion, the synthetic antioxidants used in CON + (BHT + BHA + ETH95), CON + (BHA + PG + CA) and CON + BHA provided greater protection against oxidation and better preserved the essential fatty acids. The natural antioxidants tested in the present study did not provide satisfactory protection.
