Globally, there is growing interest in microalgae production as innovative vegetable biomass rich in phytochemicals at high added value to apply in different commercial sectors (food, feed, nutraceutical, cosmetician and wastewaters depuration) and as future biodiesel source for the high lipid content and fatty acid profile of some species. To date the microalgae market for food and feed is a niche market but it is increasingly relevant and strictly correlate to their chemical composition (in particular lipids, fatty acids profile, proteins, carbohydrates, pigments and vitamins), underlying that microalgae biomass has the potential to be competitive respect the others conventional vegetable sources. From a point of view of biodiesel source the microalgae production is yet too expensive, both for fertilizers cost both for energy consumption for harvesting, drying and extraction. To develop the competitiveness of microalgae based products, some technical and economic aspects, that play a key role in biomass production costs and in production environmental sustainability, have to be considered. In the present research liquid digestates from anaerobic digestion of organic waste and food industry by-products were analyzed as alternative cheap fertilizer for autotrophic and heterotrophic microalgae production. An overview in terms of possible application of produced biomass in commercial sector on the basis of EU legislation was also considered. The thesis work consists of four experiments: 1) An overview of the use of liquid digestates and food industry by-products as microalgae grow media; 2) Heterotrophic production of Galdieria sulphuraria in spent cherry brines and its effects on the biomass productivity and composition; 3) The growth and the ability to metabolize the nutrients presents in different liquid digestates of two species of freshwater microalgae (S. obliquus, B. braunii), a marine diatom (P. tricornutum), and a photosynthetic cyanobacterium (A. maxima); 4) The evaluation of biomass productivity, the carbon dioxide fixation rate and the biochemical composition of two microalgal species, P. tricornutum and S. obliquus, grew indoors in high-tech photobioreactors and open ponds and low photobioreactors technology in greenhouses in southern Italy. Microalgae were cultivated using standard medium and two liquid digestates obtained by anaerobic digestion of vegetable biomass and zootechnical wastes. In conclusion the alternative media applied showed the ability to support sustainably the microalgae production, leading a reduction of productivity of about 25% with the use of by-products of confectionary industry, and a productivity in line with the standard medium with the use of liquid digestates for S. obliquus and P. tricornutum. Furthermore, the biochemical profile changes of biomass produced with the use of the liquid digestates were highlighted, in terms of lipids (average increase of 55%) and carbohydrates (average decrease of about 5%). With the use of by-products from the confectionary industry was observed a variation in the nutritional composition of the biomass, with an average reduction of about 35% of the protein and lipid content and, with an increase of about 70% in terms of polyphenols, in particular anthocyanins, and with an increase of 12% of carbohydrates. Also the lipid profile showed the variations, a decrease of about 70% of saturated fatty acids and an increase of 10% of unsaturated FA for liquid digestates and by products from confectionary industry utilized. The different microalgae species utilized were metabolized and reduced by about 90% the NH4 + -N The different microalgae species were highlighted a good capacity of phyto-remediation with a reduction of about 90% the NH4 + -N and a reduction of PO4 of about 86%. The cultivation with liquids digestates and the wastewater of the preserved cherries production process allow in addition to a reduction in costs of fertilizer, also interesting changes on the composition of the biomass produced and in some cases the enrichment of the biomass with compound with high biological activity.

This paper proposes a project - a local festival (Cal-Iter) of the Avellino's cheese industry - for local development that adopts a systemic approach which goes beyond a traditional place marketing approach. The approach followed in this contribution starts from a literature review of two different strands of study that have offered insights with regard to place management.Then, the proposed project is developed by means of Network Analysis, which supports the identification, analysis and description of relationships and roles of partners in the network.The analysis of the status quo found that the implementation of integrated projects require local participation of Cities (Submitting Subjects), Regional and Provincial Authorities (Co-ordinating Subjects), the Government and the EU (Regulating Subjects). Furthermore, the analysis of existing projects redefined the guidelines of Avellino's local development, by adopting a systemic approach. The proposed project may be an important factor both to support the "food and wine" tourism and to attract investments for the entire province of Avellino. Moreover, the consolidation of the "place identity" is further enhanced through the integration of "place communication", according to a systemic perspective (Siano et al., 2008). The study represents a first step in the planning of local networks for the enhancement of local areas. This has dual value: on the one hand, to stimulate tourism demand and on the other, to attract investments capable of generating further demand for goods/services in the area.KEY WORDS local development | local system, networks | festivals | "wine and food" tourism.

Le profonde trasformazioni che hanno interessato l'industria alimentare, unitamente alle accresciute capacità delle scienze mediche ed epidemiologiche di individuare nessi causali tra il consumo di determinate sostanze e l'insorgere di patologie, hanno imposto al legislatore di intervenire nella materia della c.d. sicurezza alimentare mettendo in atto sistemi articolati e complessi tesi a tutelare la salute dei consociati. Quest'ultimo obiettivo viene perseguito, da un lato, mediante disposizioni di natura pubblicistica e di carattere preventivo e, dall'altro lato, dallo strumento della responsabilità civile. Le due prospettive di tutela della salute delle persone costituiscono parti distinte ma al tempo stesso fortemente integrate in una logica unitaria. Questa prospettiva emerge chiaramente nel sistema statunitense: in quel ordinamento la disciplina pubblicistica della sicurezza degli alimenti – definita dalla Food and Drug Administration – costituisce un punto di riferimento imprescindibile anche quando si tratta di stabilire se un prodotto alimentare è difettoso e se, di conseguenza, il produttore è chiamato a risarcire i danni che scaturiscono dal suo utilizzo. L'efficace sinergia che si instaura tra la dimensione pubblicistica del c.d. Public Enforcement e quella risarcitoria (Private Enforcement) viene ulteriormente valorizzata dalla presenza di efficaci strumenti di tutela collettiva tra i quali la class action assume una importanza fondamentale. Proprio muovendo dall'analisi del sistema statunitense, l'indagine si appunta in un primo momento sull'individuazione delle lacune e delle criticità che caratterizzano il sistema nazionale e, più in generale quello comunitario. In un secondo momento l'attenzione si focalizza sull'individuazione di soluzioni interpretative e de iure condendo che, anche ispirandosi agli strumenti di tutela propri del diritto statunitense, contribuiscano a rendere maggiormente efficace la sinergia tra regole preventive sulla sicurezza alimentare e regole risarcitorie in materia di responsabilità del produttore. ; Profound changes have affected the food industry over the last decades and medical sciences, epidemiology in particular, are increasingly able to identify causal links between the consumption of certain substances and the onset of diseases. These developments have triggered legislative intervention on food safety-issues, leading to a complex system of rules designed to protect public health. Two instruments aim at achieving this goal, namely public law-regulations designed to protect the consumer in advance and civil law-liability rules. Distinct as these instruments are, they are at the same time strongly interconnected by their shared rationale. This dimension is evident in the U.S. system: in the United States, the public law-rules on food safety defined by the Food and Drug Administration are points of reference when it comes to determining whether a food product is defective and whether, as a result, the manufacturer is liable for damages. Effective synergies between public rules (public enforcement) and private law rules (private enforcement) are further enhanced by instruments of collective protection, among which class actions are of fundamental importance. Switching from the analysis of the U.S. situation to the European perspective, the study examines defects that characterize the national Italian and, more generally, the EU-system. At a later stage, the focus will be on developing – with regard also to US legal instruments – a system in which public food safety-rules and private liability rules interact effectively to protect public health.

Il settore suinicolo ricopre un ruolo rilevante nel contesto nazionale, con ricadute economiche e sociali di primaria importanza in varie regioni. Tuttavia da alcuni anni il settore si trova in crisi a causa dell'instabilità dei mercati internazionali, dello scarso coordinamento tra gli attori della filiera, della progressiva riduzione della redditività dei prodotti trasformati a Denominazione di Origine, della mancata valorizzazione dei tagli di carne fresca, nonché della difficoltà di aggredire i mercati esteri. Altre criticità riguardano la distribuzione del valore lungo la filiera e la scarsa efficacia delle politiche di coordinamento finora adottate. L'obiettivo della ricerca è quello di identificare gli elementi che possono garantire maggiore equilibrio di potere negoziale tra allevatori suinicoli e macellatori rispetto alla situazione attuale: verificati gli elementi critici che caratterizzano la relazione commerciale tra allevatori e macellatori, si avanzano alcune proposte operative utili al superamento delle fratture tra la componente agricola e quella dei macelli in Emilia Romagna. La struttura della tesi è la seguente: (capitolo 1) si descrive il quadro economico del settore suinicolo a livello internazionale e nazionale. Successivamente (capitolo 2) si passano in rassegna le teorie economiche utili a comprendere le ragioni alla base del malfunzionamento dei rapporti tra gli attori della filiera agroalimentare, mentre nel terzo capitolo è richiamato il quadro normativo comunitario, nazionale e regionale all'interno del quale tali relazioni si configurano. Nel quarto capitolo si elabora un modello interpretativo al fine di spiegare le fratture che oggi contraddistinguono le relazioni in essere tra gli attori della filiera: il "modello delle fratture". Alla luce di questa concettualizzazione è stata svolta un'indagine diretta svolta presso gli operatori aderenti all'Organizzazione Interprofessionale del Gran Suino Italiano, i cui risultati hanno consentito di valutare l'efficacia del modello interpretativo e di fornire indicazioni migliorative della strategia di governance delle relazioni tra allevatori e macellatori. ; The Italian pig industry has a role of great importance in the national context, with social and economic impact of primary importance in some specific areas, us Emilia Romagna region. However, the sector is facing a number of difficulties: the instability of the international markets, lack of coordination among the economic actors in the sector, the gradual reduction in the profitability of some Protected Designation of Origin products. Furthermore, a critical issue is represented by the imbalance in the distribution of value along the supply chain and also by the lack of effective coordination of policies among the actors. The aim of the research is to identify the elements that can ensure greater balance of bargaining power between pig farmers and processors: first of all the research verifie the critical elements of the relationship between farmers and slaughterers and the figures out some practical proposals useful in overcoming the divisions between the agricultural component and the slaughterhouse in Emilia Romagna, as the need to strengthen the coordination in the supply chain and to adopt written contracts.

RIASSUNTO Nell'ambito delle filiere produttive degli alimenti, ogni organismo animale non desiderato deve essere considerato infestante e il suo ingresso nei luoghi di produzione/deposito degli alimenti deve essere impedito. La presenza dei pest potrebbe infatti compromettere la qualità e la salubrità dei prodotti alimentari, determinando, oltre a problematiche di natura economica e sanitaria, anche un importante danno all'immagine dell'azienda. Secondo la normativa vigente il responsabile di un'industria alimentare è quindi tenuto ad attivare sistemi di prevenzione per la produzione di alimenti igienicamente idonei, attuando un piano di autocontrollo secondo il sistema HACCP. Questo si basa sulla valutazione del processo produttivo, su una corretta e precisa analisi dei pericoli e sul controllo ed il monitoraggio continui, al fine di prevenire, eliminare o ridurre a un livello accettabile tutti i rischi evidenziati. La lotta ai pest nell'industria alimentare, si è basata per molti anni solo sull'impiego delle sostanze chimiche, con trattamenti eseguiti a calendario, oppure, d'urgenza rincorrendo un problema. Le sempre più diffuse preoccupazioni per l'ambiente e l'esigenza dell'industria alimentare di applicare metodiche preventive efficaci, hanno portato a un notevole progresso tecnologico del settore pest control. In quest'ottica il "Centro Freschi" di Unicoop Firenze, ubicato a Pontedera, presso il quale ho svolto la mia attività di tesi, ha deciso di implementare nuovi sistemi di gestione degli animali infestanti. In particolare sono stati installati dispositivi per la gestione dei roditori, nell'area interna ed esterna che, in caso di cattura, inviano in tempo reale una mail all'Ufficio Qualità. Un'altra importante innovazione è rappresentata dal web reporting, ossia un sistema di gestione informatizzato del monitoraggio, che permette di avere una planimetria interattiva online sempre aggiornata, schede tecniche materiali associate ad ogni singola postazione, soglie infestanti per singola postazione, statistiche e grafici. Nel presente lavoro sono stati analizzati i limiti delle vecchie procedure ed è stata effettuata un'analisi dei dati relativi alla situazione dell'anno 2014. Tale innovazione è risultata estremamente efficace, permettendo un controllo in tempo reale e di conseguenza una gestione immediata delle problematiche legate ai pest. ABSTRACT Within the productive spinnerets of the foods every not desiderate animal organism must be considered infesting and its entry in the places of production/ deposit of the foods severely goes prevented. The presence of the pests would be able in fact to jeopardize the quality and salubriousness of the alimentary products, determining, besides problem list of economic and sanitary nature, also an important damages to the image of the firm. According to the normative in force the person responsible of a food industry is therefore kept to hygienically activate systems of prevention for the production of fit foods, effecting a plane of self-control according to the system HACCP. This founds him on the evaluation of the productive trail, on a correct and precise analysis of the dangers and on a control and a monitoring you continue, whit the purpose to prevent, to eliminate or to reduce all the underlined risks to an acceptable level. The struggle to the pest in the food industry, is founded only for many years on the employment of the chemical substances, with treatments performed to calendar, or, of urgency running after a problem. The more and more diffused worries for the environment and application from the legislators for best practices in the industry have brought to have to contrive infesting new methods of control. In this optics the "Centro Freschi" of Unicoop Firenze, situated in Pontedera, near which I have developed my activity of theses, decided to implement new of systems of management of the infesting animals. Particularly they have been installed devices, in the inside and external area, that, in case of capture, they send in real time a mail to Quality Office. Another important innovation is represented by the web reporting or rather a system of computerized system for monitoring, that allows to have an interactive planimetry online always adjourned, in partnership material technical cards to every single posting, thresholds infesting for single posting, statistic and graphs. In the present job I analyzed the limits of the old procedures and effected an analysis of the data related to situation of the year 2014. Such innovation results extremely effective, allowing a control in real time and accordingly an immediate management of the problem list to the pests.

In a fast changing environment a continual improvement in terms of identification, evaluation and implementation of new technological innovations is a critical factor for organizational productivity, competition and survival. The purpose of this paper is to scrutinize a technology adoption process of a small family business applying innovation adoption and diffusion frameworks. The empirical part of the study investigates an adoption process in which a small food processing company adopted a new aseptic packing machine. The internationalization of food processing industry combined with growing amount of global raw material sourcing is posing increasing challenges for companies, authorities and governments in terms of guaranteeing food safety. These circumstances offer an interesting and fruitful context in which to study a technology adoption process in a small business setting.
