BACKGROUNDControlled water deficits affect grape berry physiology and the resulting wines, with volatile composition being the one of the affected parameters. However, there is a potential disconnect between aromatic maturity and sugar accumulation. Accordingly, the effects of three different water status levels over two growing seasons (2014 and 2015) and two different harvest dates on the aroma compounds from Cabernet Sauvignon wines were studied. Volatile compounds were determined using headspace solid phase microextraction coupled with gas chromatoghraphy/mass spectrometry. RESULTSAround 45 volatile compounds were determined in the wines and, among these, esters were affected the most, presenting lower concentrations when the most restrictive water treatment was applied in both years. By contrast, volatile acids presented the highest concentrations when the lowest level of irrigation was applied. On the other hand, a delay in harvesting produced an increase in the total amount of volatile compounds in samples from the most restrictive water treatment. These results are coincident with a principal component analysis that indicated a great separation between years, deficit irrigation treatments and harvest dates. CONCLUSIONThe results of the present study suggest that a low water supply had a negative effect on the aromatic potential of wines at a similar ripening stage. Five Vitis vinifera L. cultivars Shiraz, Cabernet Sauvignon, Riesling, Chardonnay and Pinot Gris at different E-L development stages were harvested in two experimental vintages. Temperature and rainfall data of the growing period were obtained from the Australian Government Bureau of Meteorology. Free terpene concentrations of all harvested grape samples were analysed using HS-SPME-GC-MS. One-way ANNOVA was performed to evaluate the significance of changes in terpene concentrations at different maturation stages. This study presents the effects of different working temperatures on the transfer of compounds during the pre-fermentative and fermentative stages of the wine making process with 'Cabernet Sauvignon' grapes. Two different procedures have been evaluated. Firstly, the pre-fermentative maceration of the crushed grapes at two different temperatures (20 degrees C and 10 degrees C). Then, the alcoholic fermentation under two different sets of conditions, the fermentation at a constant temperature of 20 degrees C and the fermentation under a positive temperature gradient from 10 to 20 degrees C. According to the experimental results, the phenolic contents (total phenolics, total anthocyanins, and total tannins) were mainly conditioned by the fermentation temperature, however the pre-fermentative conditions also affected the content levels of these compounds. Furthermore, the use of a fermentation temperature gradient improved the organoleptic characteristics of the wines. However, the color was not as stable as that of wines produced through fermentation at a higher constant temperature. Consequently, the implementation of a temperature gradient during the alcoholic fermentation process is recommended and a longer period at high temperature over the last phase of the process would be desirable to obtain aromatic wines with the desirable color stability. ; This research was co-financed by the 2014-2020 ERDF Operational Programme and by the Department of Economy, Knowledge, Business and University of the Regional Government of Andalusia. Associations between wine quality and a single soil or topographic factor are usually weak, but little information is available on the effect of terrain (elevation, aspect and slope) as a compound micro-terroir factor. We used the topographic wetness index (TWI) as a steady-state hydrologic and integrative measure to delineate management zones (MZs) within a vineyard and to study the interactions between vine vigor, water status and grape and wine quality. The study was conducted in a commercial 2.5-ha Vitis vinifera 'Cabernet Sauvignon' vineyard in Israel. Based on the TWI, the vineyard was divided into three MZs located along an elongate wadi that crosses the vineyard and bears water only in the rainy winter season. MZ1 was the most distant from the wadi and had low TWI values, MZ3 was closest to the wadi and had high TWI values. Remotely sensed crop water stress index (CWSI) was measured simultaneously with canopy cover (as determined by normalized difference vegetation index; NDVI) and with field measurements of midday stem water potential (Ψstem) and leaf area index (LAI) on several days during the growing seasons of 2017 and 2018. Vines in MZ1 had narrow trunk diameter and low LAI and canopy cover on most measurement days compared to the other two MZs. MZ1 vines also exhibited the highest water stress (highest CWSI and lowest Ψstem), lowest yield and highest wine quality. MZ3 vines showed higher LAI on most measurement days, lowest water deficit stress (Ψstem) during phenological stage I, highest yield and lowest wine quality. Yet, in stage III, MZ3 vines exhibited a similar water deficit stress (CWSI and Ψstem) as MZ2, suggesting that the relatively high vigor in MZ3 vines resulted in higher water deficit stress than expected towards the end of the season, possibly because of high water consumption over the course of the season. TWI and its classification into three MZs served as a reliable predictor for most of the attributes in the vineyard and for their dynamics within the season, and, thus, can be used as a key factor in delineation of MZs for irrigation. Grapevine trunk diseases (GTDs) are one of the main biotic stress factors affecting this crop. The use of tolerant grapevine cultivars would be an interesting and sustainable alternative strategy to control GTDs. To date, most studies about cultivar susceptibility have been conducted under controlled conditions, and little information is available about tolerance to natural infections caused by GTD fungi. The objectives of this study were: (i) to identify tolerant cultivars to GTD fungi within a Spanish germplasm collection, based on external symptoms observed in the vineyard; and (ii) to characterize the pathogenic mycoflora associated with symptomatic vines. For this purpose, a grapevine germplasm collection including 22 white and 25 red cultivars was monitored along three growing seasons, and their susceptibility for esca foliar symptoms was assessed. Fungi were identified by using morphological and molecular methods. Cultivars such as, 'Monastrell', 'Graciano', 'Cabernet Franc', 'Cabernet Sauvignon', 'Syrah', 'Moscatel de Alejandría', 'Sauvignon Blanc', and 'Airén' displayed high susceptibility to GTDs, whereas others such as 'Petit Verdot', 'Pinot Noir', 'Chardonnay', and 'Riesling' were considered as tolerant. On a sunny spring afternoon this year, winemaker Cristina Frolov was leading an impromptu tour through ridges of dried mud, gravel, and shoots of green at her family's winery in Moldova. The season's grape vines at Castel Mimi were just beginning to flower. The central Codru wine region, where the vineyard is located, is traditionally known for its white grapes. But Frolov explained that they've had success in recent years growing higher-value-added red varieties such as cabernet sauvignon. The interest from the West has enabled the wine industry to find a toehold in Europe and to ultimately stay afloat during the Russian ban; sales of bottled Moldovan wine in Western Europe actually grew 14% in 2014. While Russia continues to toy with the Moldovan economy's largest sectors, the general population, it seems, blames its own government, not Moscow, for the fiscal woes. Ultrasound has gained attention from the food industry because its properties, including chemical and physical reactions, enable a wide range of commercial applications. One of the most popular applications is the optimization of extraction of bioactive substances. Among the most recent applications is its use in postharvest of fruits and vegetables, wherein ultrasound functions as a possible elicitor agent promoting the synthesis of phenolic compounds. These substances are important in defining the chemical and sensory characteristics of juices, wines and other grape products because the concentration and extraction capacity of these compounds in grapes directly influence the product quality. Thus, this study aimed to evaluate the application of ultrasound in American and vinifera grapes of different harvests with regard to its effects on fruit extractability and concentration of phenolic compounds in elaborated juice and wine. The results indicated that, under certain conditions, ultrasound could lead to a significant increase in the anthocyanin concentration in 'Isabella' grapes and its juice. On the other hand, in 'Cabernet Sauvignon' grapes, most of the treatments did not indicate positive results in the tested parameters and tended to promote degradation of anthocyanins at significant levels. However, the observed effects varied depending on the harvest conditions and cultivar characteristics.

In an increasingly interconnected world wine market, evolving consumer demands, technologies, and climate have all contributed to large shifts in global patterns of production and consumption of wine. These shifting patterns of wine production and consumption have entailed changes in the vineyard in terms of total area planted, production practices, and the mix of grape varieties grown. In this book, for the first time, we have a detailed empirical picture, country by country and region by region within countries, of which varieties of grapes have been grown where, and how those varietal choices have changed over time. This statistical compendium will be directly useful for anyone interested in knowing about and understanding the changing patterns of production of wine and wine grapes around the world. It also will serve as an invaluable resource for economists and others who seek to analyze those patterns and their causes

Purpose
The purpose of this paper is to analyze whether or not the reputation of a region/country in the international wine market depends on a region/country's efforts to specialize in a specific grape variety.


Design/methodology/approach
Data on 19,959 bottles of wine corresponding to six vintages across ten wine producing regions worldwide are used to estimate a hedonic price model that measures consumer valuations of the different wine attributes.


Findings
The results of this study show that although variety specialization has successfully underpinned the reputation of some New World regions, such as the Napa Valley (with its Cabernet Sauvignon) or Oregon (with its Pinot Noir); in others, such as Australia (with its Shiraz), this has not been successful.


Practical implications
Over the last ten years, the exponential growth of Australian bulk wine exports has seriously harmed the reputation of Australian wine. With respect to the Napa Valley wines, price discount received by Australian wines increases between the 1997 and 2007 vintage from 33 to 61 percent. Thus, in order to successfully build a collective reputation of an entrant (New World) country, an institutional framework that mediates differences of interest between the large and small vineyards and, above all, that regulates the free-rider problem in the wine market is required.


Originality/value
This paper empirically illustrates how cooperative (and non-cooperative) behavior between firms can help to build (and to destroy) collective reputation of wines that come from the same region or country.
