Anhand der Angaben von Schweizer und deutschen Lehrpersonen (N=116) und Schüler/-innen (N=2173) der Sekundarstufe I wurde untersucht, welche Texte Lehrpersonen im Unterricht einsetzen und wie sich die Auswahl zu freizeitlichen bzw. schulbezogenen Leseinteressen der Schüler/innen verhält: Es zeigt sich, dass diese je nach Leseumgebung bei den Leseinteressen unterscheiden. Für die Freizeit rücken sie Unterhaltungsgenres ins Zentrum. Fürs schulische Lesen behalten sie diese Vorliebe teilweise bei, geben aber Themen den Vorrang, die freizeitlich wenig Zuspruch erhalten (bspw. politisch-gesellschaftskritische Texte). Letztere sind in der lehrerseitigen Textauswahl stark vertreten, Freizeitgenres dagegen wenig. Für die Unterrichtstextauswahl besteht also ein größerer Schnittbereich mit schulischen Leseinteressen der Schüler/-innen als mit freizeitlichen. Das Aufgreifen von Freizeitleseinteressen im Literaturunterricht bedarf demnach kritischer Diskussion. Es sollte berücksichtigt werden, dass Schüler/-innen diese Interessen offenbar nicht durchweg im Literaturunterricht vertreten sehen möchten. Für das schulische Lesen erhalten auch Texte hohen Zuspruch, die zur kritischen Reflexion anregen. (DIPF/Orig.) ; Using classroom media protocols in Swiss and German secondary schools, we analysed which text genres teachers (N=116) preferred in their teaching of German-L1 literature classes. We compared the findings with information on student (N=2173) reading interests obtained through questionnaires. The results show that teachers preferred texts about political or social topics; their selection featured only a small share of entertainment genres. Student reading interests differed between contexts: For their private reading, students preferred entertainment genres, with only a minor interest in socio-political topics. For reading at school, students retained their preference for entertainment genres, but also reported a strong interest in sociopolitical topics. Hence, teachers' text selection had a greater overlap with students' school reading preferences. In the discussion, we argue that teaching approaches promoting the inclusion of student interests for text selection need to consider that teenage students may not simply wish to extend their private reading to the classroom. Instead, they may expect that school provides them with texts that engage them in critical thinking and group discussion.

Schon vor dem spanischen Starkoch Ferran Adrià ruft die avantgardistische Künstlergruppe der italienischen Futuristen eine Revolution der Kochkunst aus und setzt damit eine neue Kunstrichtung in Gang: die Eat Art. Seitdem nimmt die künstlerische Auseinandersetzung mit dem Thema Essen und dem ganzen Spektrum der Nahrungskette auf vielfältige Weise zu. Dieses Buch behandelt einschlägige Positionen dieser Kunst des Essens und eröffnet damit der philosophischen Theorie der Gegenwartskunst ein ebenso aktuelles wie facettenreiches Forschungsfeld. Darüber hinaus dient der Entwurf einer gastrosophischen Ästhetik der programmatischen Absicht, zentrale Grundannahmen der traditionellen Ästhetik zu revidieren, indem erstmals das kulinarische Geschmacksurteil als ein philosophisches Erkenntnisvermögen gedacht wird. Alles in allem wird eine "Essthetik" kreiert, die wesentliche Zutaten der Ethik und Politik eines besseren Welt-Essens auftischt.

Kitsch wird hier zunächst ästhetiktheoretisch betrachtet, vor allem anhand von Kant. Er wird als Tabu in Hinblick auf die Reinhaltung des Geschmacksurteils vom Interesse dargestellt. Es wird untersucht, inwiefern und inwieweit Kitsch der Entwicklung von Geschmack dient. Dabei wird herausgearbeitet, dass die vorschnelle Verwendung des Prädikats "Kitsch" Genuss verbauen kann. Es wird auf den Interessenkonflikt zwischen den Geschmackvollen und jenen, die aus unterschiedlichen Gründen der Kitschigkeit zum Opfer fallen, eingegangen. Neben der Bedeutung des Kitsch in der Kunst bzw. dem Diskurs über kulturelle Entwicklung wird auf die kulturelle Bedeutung des lebensweltlichen Genusses eingegangen, der oft - teils zu Unrecht - der Kitschigkeit besonders verdächtig erscheint.

Ausgehend von der Feststellung, daß in immer mehr häuslichen Bereichen immer mehr selbst gemacht (= renoviert, repariert, verschönert, verbessert, verändert) wird, wird in dem Beitrag die Bedeutung des Do-It-Yourself im Alltag untersucht. Verschiedene Formen des Selbermachens werden nach ihrem Zweck unterschieden: Reparaturen und Restaurationen sollen funktionale und ästhetische Defizite beheben, Kreationen und Konstruktionen ästhetische und funktionale Überschüsse erzeugen. Verschiedene Heimwerker-Typen werden beschrieben: Romantiker, Pragmatiker und Ideologen. Die Kulturbedeutsamkeit des Heimwerks wird analysiert. Dabei wird das Symbolhafte des Heim-Werks herausgearbeitet. Die kulturinnovative Leistung im Kontext der Selbst-Verwirklichung des Individuums wird deutlich. Daß dabei Geschmack und (bürgerliche) Wohnvorstellungen eine besondere Rolle spielen, wird erläutert. Der Zusammenhang von der kleinen Kultur des Do-It-Yourself zur großen Kultur der Moderne wird hergestellt, indem der Heimwerker als metaphorischer Prototyp des gegenmodernen Renitenzlers dargestellt wird, der - sein Unbehagen in der Modernität abarbeitend - nach einer lebenspraktisch brauchbaren Sinn-Heimat sucht. Vor diesem Hintergrund wird Do-It-Yourself als eine unsichtbare Art gesellschaftlichen Arbeitens, einer Art Sub-Ökonomie interpretiert, wobei in kultursoziologischer Sicht die Praxis des Do-It-Yourself als Tätigkeits- und Ausdrucksform des Individuums im Alltag zählt. Im Rahmen der Arbeit wird der Frage nachgegangen, was Regionalität von Lebensmitteln im wissenschaftlichen Diskurs, in Initiativen zur Regionalvermarktung und für die Akteure der Lebensmittelversorgung in der Region Osttirol (Bezirk Lienz, Österreich) bedeutet. Die Arbeit ist in ein Interreg III B-Projekt des Landes Tirol eingebunden. Von Oktober 2006 bis März 2007 wurden wissenschaftliche Literatur und 22 Regionalvermarktungsinitiativen hinsichtlich Kriterien für regionale Lebensmittel analysiert. In Osttirol wurden 13 Konsumenten befragt, 2 Workshops mit 21 Teilnehmern veranstaltet und Interviews mit 10 Produzenten und Anbietern geführt. Sowohl in der Wissenschaft als auch aus Sicht der Regionalvermarktungsinitiativen werden regionale Lebensmittel über die reine Herkunft der Rohstoffe hinaus durch eine überdurchschnittliche Produkt- und Prozessqualität im Sinne der ökologischen und sozialen Aspekte der Produktion definiert. Die Gesprächspartner teilen im Wesentlichen diese Charakterisierung regionaler Lebensmittel, häufig werden jedoch die gesetzlichen Vorgaben und die übliche Praxis in der Region als ausreichend empfunden. Die biologische Landwirtschaft als übergreifendes Kriterium wird von den Akteuren nicht in Betracht gezogen. Während es aus wissenschaftlicher Sicht gute Argumente für Kriterien für regionale Lebensmittel gibt, sind für die Gesprächspartner Vertrauen, persönliche Bekanntschaft, "Geschichten" hinter den Produkten und ein "guter Geschmack" bestimmend für die Regionalität von Lebensmitteln - und für den Vermarktungserfolg. Im Hinblick auf eine regionale Lebensmittelversorgung als Beitrag zur nachhaltigen Entwicklung der Region wird von der Autorin empfohlen, detaillierte und weiterreichende Kriterien für regionale Lebensmittel v.a. im Bereich der Prozessqualität fest zu legen. Die Ergebnisse des Projekts sind ein punktueller Beitrag in einem partizipativen Prozess mit normativen Elementen, der im Rahmen dieser Arbeit nicht abgeschlossen wurde. ; The masters thesis deals with the meaning of the attribute "regional" for food as well as from a scientific point of view as in existing regional marketing initiatives and for the actors in the food production chain in Eastern Tyrol (district of Lienz, Austria). This thesis is part of an Interreg III B-project of the Federal Government of Tyrol. Between October 2006 and March 2007, scientific literature was reviewed and 22 regional marketing organizations were analyzed, resulting in a sample of criteria for the regionality of food. In Eastern Tyrol 13 consumers were asked for their understanding of regional food. Two workshops with 21 participants and explorative interviews with 10 producers and providers aimed at developing a list of criteria for regional food. The criteria mentioned in scientific literature as well as used in the analysed regional marketing initiatives can be assigned to three dimensions of quality: provenance of ingredients, product quality and process quality, i.e. ecological and social aspects in the production process. The results show that local actors share this definition of regional food that goes beyond the mere provenance of ingredients or location of processing. The status quo of the regional food production system and the national laws were in many cases considered as "good enough". Organic farming was not favoured by the respondents as a composite criterion. While scientists stress the importance of approved criteria for regional food, for the respondents trust, personal relations, "pictures and stories" and a good taste are characteristics of regional food - and responsible for marketing success. When regarding a regional food system as means of sustainable regional development, the involvement of more detailed criteria foremost in the field of process quality is advised by the author. In this dissertation I have extended the model of Krueger and Ludwig (2013) and (2016) by (i) linking the prospect of successful college completion to human capital, (ii) introducing taste shocks in order to deal with potential issues caused by the discrete college choice and (iii) incorporating the human capital process during primary and secondary education. This results in a large-scale OLG model, that accounts for the core mechanisms of the human capital literature and allows for endogenous responses within the whole human capital process of primary, secondary and tertiary education, to changes in college subsidies and non-tertiary education investments by the government. By embedding this setup into a large-scale OLG environment, we were able to compare the different paths of impact of the policy measures in a realistic framework. In partial equilibrium, non-tertiary education investments and college subsidies deviate regarding their distributional consequences. Both measures increase average human capital, which leads to higher aggregate production and consumption. However, while primary and secondary education expenses of the government increase the human capital level for children from all household types, college subsidies do not increase the human capital investments from education and income-poor parents, which leads to an increase of inequality. When wages respond to shifts in the labor market, both policy measures increase equality. This is accomplished by an endogenous decrease in the college wage premium, which lowers the return on parental human capital investments. The key difference between the two measures is, that while both policy instruments result in a more equal distribution of human capital, non-tertiary investments of the government compensate for the decreased human capital expenditures of parents and shift average human capital to a higher level. The bivariate experiments underline the interdependence of the two policy measures. Benefits of college subsidies can only be claimed if young adults have the skills to successfully complete college. Early human capital investments remain unused, if college education can only be afforded by a small fraction in the population. In all experiments we have performed, the best policy mix calls for an increase in primary, secondary and tertiary education investments by the government, financed by higher labor taxes relative to the current status quo.

In Kindheit und Jugend ist eine Auseinandersetzung mit ästhetischen Darstellungs- und Wahrnehmungsweisen hochgradig relevant. Die Bedeutsamkeit ästhetischer Positionierungen - etwa durch die Wahl der Kleidung oder Accessoires, durch Make-up oder technische Geräte - kann einerseits als Anzeichen einer sehr erfolgreichen Kommerzialisierung von Kindheit und Jugend gedeutet werden. Andererseits zeugt sie aber auch von einem Gespür, mit dem sich Kinder und Jugendliche die Alltagswelt, in der sie leben, zu eigen machen. Um die sozialen Verhältnisse von Ästhetiken, Ökonomien und Generationenbeziehungen in den Blick zu nehmen, versammelt dieser interdisziplinäre Band Forschungsperspektiven zu Alltagsästhetiken in Kindheit und Jugend.
Der irische Buchmarkt als Teil des englischsprachigen Buchmarktes ist stark von der Geschichte des Landes geprägt. Die Fremdbestimmung im Rahmen des Commonwealth unterdrückte eine eigenständige Verlagslandschaft bis weit ins 20. Jahrhundert hinein. Mit der Unabhängigkeit des irischen Staates stieg die Anzahl der Verlage langsam aber stetig an. In den 70er Jahren kam die irische Verlagslandschaft zu einem fast explosionsartigen Erblühen. Die Gründung des Verlegerverbandes Clé war einer von vielen Schritten, um den nationalen Buchmarkt von der Dominanz britischer Bücher in Buchhandlungen und Bibliotheken zu emanzipieren. Die Nachfrage nach Irish-Interest-Titeln ist im Inland hoch. Britische Verlage hatten bis dato diesen Bedarf übersehen, und so füllten irische Verlage diese Nische. Die Einführung eines von Großbritannien unabhängigen Lehrplans führte zur Etablierung eines eigenständigen Schulbuchmarktes, inklusive Lehrwerke zur irischen Sprache bzw. Titel auf Irisch. Irische Verlage sind in ihrem Programm größtenteils breit aufgestellt und selten spezialisiert. Sie sind erstaunlich häufig unabhängige mittelständische Unternehmen. Nur wenige Verlage sind staatlich geführt oder gehören ausländischen Konzernen an. Auch der stationäre Buchhandel ist überwiegend eigenständig, da die – vor dem Wirtschaftsboom wenig kaufkräftige - Republik von den expandierenden britischen Buchhandelsketten vernachlässigt wurde. Erst nach dem Wirtschaftsboom und dem damit verbundenen soziokulturellen Wandel von einer traditionellen Agrar- hin zu einer modernen Informationsgesellschaft stiegen die Umsätze mit Büchern stark an. Sobald der Buchmarkt eine nennenswerte wirtschaftliche Größe erreichte, eröffneten britische Buchhandlungen Filialen in irischen Städten. Sie vermochten jedoch nicht, die Sortimentsvielfalt der irischen Buchhandelslandschaft zu zerstören. Die fehlende Buchpreisbindung ist keine Bedrohung der Titelvielfalt, da Handelsformen wie Buchclubs, Supermärkte und Internethandel – die mit teils aggressivem Preismarketing arbeitenden Nebenmärkte – hier nur eine Randexistenz führen. In diesem Fall wandelt sich die geringe (Umsatz-) Größe und damit Attraktivität des Buchmarktes zum Vorteil. Die staatliche Kulturförderung ist ein bedeutender Beitrag zum Verlegen von Literatur, die wirtschaftlich gerechnet keine Daseinsberechtigung hätte. Irische Verleger mit relativ geringem Budget sind nicht in der Lage, solche unökonomischen Titel mit dem finanziellen Erfolg eines Bestsellers in Mischkalkulation aufzufangen. Hier greift die staatliche Unterstützung. Die Subventionierung von Titeln über die irischen Sprache bzw. von Literatur auf Irisch führte zur Herausbildung eines Marktsektors, der vor der Staatsgründung nicht existierte. Die Übersetzungsförderung verstärkt die Verbreitung von bis dato unbekannter irischer Literatur im Ausland und stimuliert das Lizenzgeschäft. Die aktuelle staatliche Kulturpolitik setzt ihren Schwerpunkt auf Marketing, PR sowie Nachfolgeregelung und fördert so nachhaltig statt bloß in Form einer kurzlebigen Titelsubvention. Eine noch mehr in die Zukunft gerichtete Förderung würde genauso wie die Unterstützung von Fortbildungsmaßnahmen zu besseren wirtschaftlichen Rahmenbedingungen führen. Auch wenn die nationale Verlagsszene im Aufschwung begriffen ist, befindet sich der irische Buchmarkt insgesamt in fester Hand der britischen Verlagsproduktion. Der britische Buchmarkt mit seinen multinationalen und finanzkräftigen Verlagen lebt vom Export. Aus Sicht von Großbritannien ist heutzutage der Nachbar Irland, einst Teil des britischen Buchmarktes, einer der besten Kunden. Dieser Aspekt bezieht sich nicht nur auf die langjährig entwickelten Handelsbeziehungen. In kulturellen Aspekten orientiert sich Irland stark am britischen Vorbild: Ein britischer Bestseller wird fast immer auch ein Bestseller in Irland. Lediglich Irish-Interest-Titel durchbrechen diesen Automatismus. Während Irish Interest im Inland hohe Umsätze vorweist, sind diese Titel im Ausland lediglich ein Nischenprodukt. Zusätzlich müssen irische Verlage außerhalb des Landes mit britischen und US-amerikanischen Verlagen in Konkurrenz treten, die ebenfalls Irish-Interest-Titel für die irische Diaspora anbieten. Es besteht daher nur eine geringe Chance, erfolgreich am globalen englischsprachigen Buchmarkt mitzuwirken. Bis dato haben Versuche, dem irischen Buchmarkt durch Export zu Umsatzwachstum zu verhelfen, keinen nennenswerten Erfolg gebracht. Lediglich auf dem Gebiet der populären Literatur und in Form von Kooperationen mit britischen Verlagskonzernen vermögen irische Verlage, am internationalen Buchhandel teilzuhaben. ; The Irish book market as a part of the trade network of the English language book market is significantly influenced by the history of the country. The British dominance suppressed an autonomous publishing industry until far into the 20th century. With the independence of the Irish state the numbers of publishers grew slowly but surely. In the seventies the publishing market came to an almost explosive unfolding. The founding of the Publishers' Association Clé was one step of many in emancipating from British dominated taste and British books in book shops and libraries. The demand for Irish interest books in the population was great and British publishers so far had missed covering that need. This enabled young Irish publishers to build up a profile in this field. The construction of an educational system independent from the British syllabus offered the chance of establishing a school book market of its own, and books on the Irish language became a special publishing sector. More or less, Irish publishing houses are all-rounders not differing much through specialisation. They are astonishingly independent; only a few of them are owned by the state or foreign companies. The whole book trade is quite independent as well, because this small republic – characterized by low consumption before the economic boom – was neglected by the expanding British book chains. After the boom and the changeover of the population from a traditional agricultural to a modern information society, the sales of books grew stronger. As the book trade prospered, British chains automatically entered Irish retail but they weren't able to destroy the network of indigenous book shops. The missing system of fixed book prices is no threat because trade forms like book clubs, supermarket and internet bookshops – all of them working with massive price reductions – only lead a minor existence in Ireland; in this case a small book market does have its advantages. The governmental support of culture is a meaningful contribution to publishing that sort of literature which wouldn't make sense economically. Publishers without a solid financial background, not being able to compensate those uneconomic titles with the financial success of bestsellers, are supported by state agencies. In the case of Irish language books the state support even enabled the growth of a publishing sector which didn't really exist before the foundation of the republic. The subvention of translation works vigorously for the spreading of unknown Irish literature abroad and therefore stimulates sales in licences. The current state policy focuses on marketing, PR and succession and enables therefore a forwardlooking support of publishers besides a merely ephemeral title subvention. An even more forward-looking funding, as well as better training facilities, would achieve better economical conditions. Although the Irish publishing scene itself is thriving, the Irish book market on the whole is in the tight grip of the British publishing industry. The British book industry with its multinational and wealthy publishing houses lives from export. Today, neighbouring Ireland, once part of the British book market, is automatically one of Britain's most important customers. This aspect not only applies to traditional trade networks; even in cultural aspects Ireland is focused on the British model: a bestseller in Britain almost always becomes one in Ireland as well. This situation only doesn't apply for books of Irish interest. While books on those subjects generate high sales turnover in the republic, they are just a niche product abroad. Additionally, outside Ireland Irish publishers have to compete with British and US publishers offering books of Irish interest as well. The chance of being a successful participant in the English language book market therefore is slim. So far attempts of pushing the growth of the Irish book industry through international trade connections has not brought huge success. Only in the field of popular fiction and in the form of cooperation with big British publishing groups Irish publishers are able to take part in the international trade.

Vor dem Hintergrund eines auch zukünftig anhaltenden Migrationsdrucks (KÄLIN 1989), des Zusammenwachsens des "Europäischen Hauses" und einer Bevölkerungsstruktur in Deutschland, die demographischen Prognosen zufolge im Zusammenhang mit der niedrigen Geburtenziffer einen stetig wachsenden Ausländeranteil aufweisen und damit an ethnischer Vielfalt zunehmen wird (BIRG/KOCH 1987), gewinnt die Auseinandersetzung mit der Frage nach der Rolle des Sports im Kontext kultureller Kontakte für eine zeitgemäße Sportwissenschaft auch langfristig einen zentralen Stellenwert. Die folgenden Überlegungen, die am Beispiel des gemeinsamen Sporttreibens von einheimischen und zugewanderten ausländischen Bevölkerungsgruppen entwickelt worden sind, rücken einen bislang unterbelichteten Aspekt dieses Problems ins Zentrum des Forschungsinteresses: die Fremdheit, die bei interkulturellen Sportbegegnungen entstehen kann. Dabei stellt der Text erstens den Zusammenhang zwischen Fremdheitsphänomenen und der internationalen Arbeitsmigration heraus. Zweitens fragt er nach den Eigenschaften, die dem Sport in diesem Kontext zugeschrieben werden, und ob die Praxis des interkulturell betriebenen Sports hält, was man sich von ihr verspricht. Drittens wird geprüft, welche Ansätze der Sportwissenschaft einen Zugang zu damit zusammenhängenden Problemen ermöglichen. Viertens soll der sportspezifische Charakter von Fremdheitserfahrungen beschrieben werden. Anschließend wird fünftens der Entwurf einer theoretischen Perspektive zur Erforschung der Fremdheit im sportlichen und nicht-sportlichen Alltag vorgestellt.
The purpose of this thesis is twofold: First, it aims at detecting empirical regularities of the business cycle in Denmark, Germany and the U.S. Second, it tries to give a theoretical explanation for these stylized facts. The thesis is fully in line with the modern analysis of business cycles in the spirit of the Real Business Cycle school initiated by Kydland/Prescott (1982) and Long/Plosser (1983). After a short summary in chapter 1 the second chapter gives a brief introduction to the structure of the basic model, to the solution method (details are transferred to the appendix) and to the main propagation mechanisms at work. The role of the degree of risk aversion of the representative agent is carefully examined. In chapter 3 the series of specific national accounts are detrended using the HP-filter to extract the cyclical component of the series. The standard deviations of these series and their cross correlations with output are reported. Special emphasis is given to lead-lag relationships. Chapter 4 builds upon the basic model of King/Plosser/Rebelo (1988a,b) which is extended in various forms to a small open economy model used to explain the stylized facts of Denmark. The speciality here is the detailed analysis of the effects of adding government spending shocks and interest rate shocks to the model. To summarize, there is no model version that fits the data well. The empirical observation that Danish consumption fluctuates more than output remains unexplained. The absolute standard deviations are too high and the variables are too strongly correlated with output. The trade balance does not move countercyclically. Chapter 5 tries to explain the German business cycle stylized facts using the two country one good model of Baxter/Crucini (1995) as a starting point. The combination of GHH-preferences (Greenwood/Hercowitz/Huffman (1988)) with taste shocks resulting from government consumption as in Bec (1995) is shown to be an important feature of the German business cycle. A VAR model for the exogenous variables is estimated that enables the model to account for the observed positive international correlations and for the lead-lag relationship of international outputs, hours worked and savings. Nevertheless the consumption correlation remains above the output correlation. Technology and government consumption shocks cannot fully account for the observed volatilities. The trade balance does not fluctuate adequately and its countercyclicality cannot be explained. The latest developments in the literature regarding these open economy business cycle models are reviewed in chapter 6. They are categorized in two country models with two goods and multi country models. Each subsection presents at first a short overview. Thereafter some specific models are depicted to make clear in which way the remaining anomalies of the one good model are tried to overcome. The main problem of all these models is to explain a high variability of the trade balance and the terms of trade while simultaneously displaying the correct ranking of the international correlations of outputs, consumption, investment and hours worked. In chapter 7 some of the very latest developments which do not fit the categories of chapter 6 are presented. The assumptions underlying the representative agent approach - utility and production functions and the aggregation problem - are critically investigated and some suggestions for future research are made.

Der Text nimmt seinen Ausgangspunkt in Bourdieus "Programm für eine Soziologie des Sports", das um das Konzept der transnationalen sozialen Räume erweitert wird. Über die Beschreibung transnationaler Sporträume hinaus werden diese dann in umfassendere Zusammenhänge gestellt, die sie unter dem Aspekt des Körperlichen mit anderen Feldern der Kulturproduktion und des kulturellen Konsums verbinden. Zur Illustration der Überlegungen in den Fokus gerückt wird exemplarisch eine Reihe von scheinbar disparaten Beispielen aus den Branchen der Schönheitswettbewerbe, des Tanzes, des Berufs- sowie des Freizeitsports, aber auch des Organ- und Menschenhandels (Human Trafficking). Wie hier ersichtlich wird, handelt es sich bei der Arbeit nicht um eine Darstellung etwaiger gesicherter Forschungsergebnisse. Anstatt dessen versteht sich der Text als eine Einladung an die Sozialforschung, auf der Basis eines praxeologisch fundierten "provisorischen Rahmens" unbekanntes Terrain zu betreten und sich ernsthaft spielend auf einen kreativen Prozess einzulassen: den der Generierung forschungsleitender Ideen.
Intentionales Kinderfernsehen transportiert spezifische Vorstellungen von Kindheit und ist ebenso politisches Objekt wie Ausdruck gesellschaftlicher Zeitströmungen. Für letztere sind die Globalisierung und Marktorientierung vieler Lebensbereiche von zunehmender Bedeutung. Auch für das Kinderfernsehen wurde immer wieder eine zunehmende Internationalisierung, Amerikanisierung, Kommerzialisierung und Vermassung, die zueinander in Beziehung gesetzt wurden, kritisch konstatiert, ohne dies mit eindeutigen Analysen zu untermauern. Die vorliegende Arbeit hat deshalb den aktuell erreichten Grad der Internationalisierung des Kinderfernsehens und dessen Bedeutung für das Programmangebot untersucht. Als Gegenstand der Studie wurden dabei das deutsche und das britische Kinderfernsehen miteinander vergleichend in Beziehung gesetzt. Nach einer medienhistorischen, kulturellen und wissenschaftlichen Einordnung der Thematik wurde für einen künstlichen Programmmonat im Frühjahr 2003 eine quantitative Bestandsaufnahme und statistische Auswertung von 21.177 Kindersendungen in beiden Ländern erstellt. Auf Basis der darin aufgezeigten Trends wurden drei Animationsserien unterschiedlicher Provenienz qualitativ auf formale, ästhetische und inhaltliche kulturelle Implikationen – national oder international – untersucht. Die quantitative Analyse ergibt, dass die Kinderfernsehangebote in Deutschland und Großbritannien bereits nach wenigen Monaten zu über 50 % identisch sind, während die jeweils eigenständigen Programmanteile die Minderheit bilden. Die Schnittmenge wird zu 80 % von Animationsserien bestimmt, und die dominierenden Programme stammen aus den USA, während sich aus Europa nur britische Produktionen nennenswert behaupten können. US-amerikanische Animationsserien allein machen 27 % des deutschen und 40 % des britischen Kinderfernsehangebots aus. Die Genrezusammensetzung beider Angebote ist weit-gehend identisch, obwohl das Material aus unterschiedlichen Quellen bezogen wird und die Briten stärker zu spezialisierter Programmbeschaffung neigen. Maßgeblicher Träger der Internationalisierung, Amerikanisierung und Cartoonisierung des Kinderprogramms sind die Zielgruppenkanäle, die zu den Sendernetworks der global operierenden Medienkonzerne gehören. Werden von diesen auch nur die fünf mit der längsten täglichen Sendezeit nicht berücksichtigt, sinkt der Umfang des Gesamtangebots an Kinderprogrammen um zwei Fünftel. Gleichzeitig schrumpft die programmliche Schnittmenge bei-der Märkte auf 40 Prozent, während die europäischen Produktionen gegenüber den amerikanischen an Bedeutung gewinnen. Das wechselseitige Verhältnis des britischen und des deutschen Kinderfernsehens verschiebt sich dadurch ebenfalls: Insgesamt ist das britische Programm für deutsche Produktionen und Koproduktionen nur halb so durchlässig wie umgekehrt; ohne die Network-Kanäle sogar nur ein Fünftel so durchlässig. Insgesamt zeigt sich eine weitgehende Internationalisierung des Kinderfernsehens, die sich in einer Homogenisierung der beiden nationalen Programmangebote und deutlicher Dominanz der Animation vor allem bei Importen und Koproduktionen äußert. Diesem Befund entspricht die inhaltliche Angleichungstendenz: Für eine erfolgreiche internationale Verwendung von Programmen ist der Verzicht auf alltagskulturelle Implikationen vorteilhaft. Dies führt dazu, dass standardisierte Produktionen in stilisierten oder phantastischen Umgebungen, mit klischeehaften Figuren und allgemeinverständlich-banalen Plots das Programm in beiden Ländern bestimmen und vereinheitlichen. Sofern doch einmal nationalkulturelle Referenzen vermittelt werden, sind diese am ehesten amerikanischen Ursprungs, da europäische Kinder aus anderen medialen Kontexten darauf vorbereitet sind. Das gegenwärtige Kinderfernsehen ist somit weniger international als vielmehr "glocal", es bewegt sich zwischen den beiden Polen des lokal-kulturspezifischen und des global-standardisierten Programms. Die Darstellung der weltweiten Vielfalt an Perspektiven und Themen ist dagegen bedeutungslos geworden. Ausgehend von den Ergebnissen dieser Studie können weiterführende Untersuchungen zukünftig Auskunft darüber geben, wie sich dieses "glocalisierte" Kinderfernsehen auf das kulturelle Bewusstsein und die Mentalitätsbildung des Kinderpublikums auswirkt. ; Intentional children's television communicates specific ideas of childhood and is subject to political debates and contemporary controversy. The latter two are increasingly reflecting the current globalization and commercial orientation across many aspects of daily life. It comes as no surprise that also for children's television an increasing internationalization, Americanization, commercialization and loss of identity and their interrelation were critically noticed in recent years, however a dedicated analysis is overdue. The present work is devoted to the Status Quo of internationalization in children's television as reflected by the available program. Subject of this study is a comparative description of both the British and German program starting from a historical sketch of children's TV. The cultural discussion and the literature are subsequently presented. For an artificial month (four disjunctive weeks) in spring 2003, 21,177 broadcasts of children's TV from both countries are the broad statistical basis for a quantitative analysis. According to representative trends three animation series of different origin are selected and qualitatively analysed with respect to formal, aesthetic and content-related cultural indications of national or international implications. The quantitative analysis reveals that over a few extrapolated months the available children's TV programs in both countries share more than 50 percent common material, i.e. the independent part is the minority. Eighty percent of the common share are animation series, predominantly originating from the USA, while among European productions only those from the UK have a portion worth mentioning. American animation series provide 27 percent of the total German children's program and even 40 percent of the British. The taste, probably best reflected by the genres is almost identical with only a difference in the providers i.e. a slightly stronger British focus on national specialties. The main promoter of internationalization, Americanization and increasing amounts of cartoons are network channels, belonging to globally operating media companies. If only five of them (those that also broadcast at night) are omitted, the total program volume shrinks to only 60 percent of the previous value with a simultaneous reduction of the common program to only 40 percent. In addition European productions gain relevance in the remaining dataset. The mutual relation of British and German children's TV market is also affected: Generally the British program is only half as accessible for German (co-) productions as the German program is to British (co-)productions but ignoring the network-channels this ratio drops to only a fifth. There is a strong tendency to internationalization in children's television as reflected by a homogenisation of both markets and a predominance of animation in imports and co-productions. This finds its correspondence in the content: to achieve a wide international distribution the abandonment of cultural references is advantageous if not mandatory. This results in standardised productions of stylised or fantastic scenarios with clichéd and stereotype characters in trivial plots that dominate and unify the program in both countries. Existing references to a national background are mostly American, probably they do not interfere with expectations as European children are prepared by other media. The contemporary children's television is thus more "glocal" than international; it is biparted into local, culture-specific references and a globally standardised program. The illustration of the global diversity of viewpoints and topics has become irrelevant. Starting from these findings, further studies should address how this "glocal" children's television shapes the cultural awareness and the mentality of the young target group.

Ziel dieser Arbeit war es, technologiebedingte Veränderungen im Profil flüchtiger Inhaltsstoffe während der Fruchtsaftverarbeitung aufzuzeigen. Gleichzeitig sollte eine Bewertung von artfremden 'carry over'-Aromastoffen erfolgen und deren Einfluss auf das Aromaprofil eines Fruchtsaftes beurteilt werden. Hierzu wurden aus unterschiedlichen Phasen der Fruchtsaftherstellung authentische Proben (Direktsäfte, Recovery-Aromen, Saftkonzentrate) von der Schutzgemeinschaft der Fruchtsaftindustrie (SGF) zur Verfügung gestellt. Ergänzt wurde diese Palette durch industrielle Halb- und Fertigwaren, um Abweichungen vom geforderten authentischen Profil zu definieren. Es kamen dabei für die Fruchtsaftverarbeitung wesentliche Fruchtarten (Apfel, Orange, Ananas, Pfirsich und Passionsfrucht) zur Anwendung. Die Bestimmung der Aromaprofile erfolgte anhand validierter qualitativer und quantitativer Aromastoffanalytik. Nach Abtrennung und Anreicherung der Aromastoffe mittels Simultaner Destillation-Extraktion (SDE) wurden die Extrakte per Kapillargaschromatographie-Massenspektrometrie (HRGC-MS) analysiert. Durch den Einsatz sensorischer Untersuchungen wurden Schwellenwerte von ausgewählten 'carry over'-Aromastoffen und 'off-flavour'-Komponenten in fünf verschiedenen Matrices ermittelt. Zusammenfassend lässt sich an Einzelergebnissen festhalten: Das bei Ananasfrüchten erhaltene Aromaprofil entsprach weitgehend Literaturangaben. Während bei den geprüften Recovery-Aromen partiell gute Übereinstimmung mit dem Aromaprofil der Frucht gefunden wurde, war bei den Handelssäften aus Konzentrat meist nur die jeweils bei den entsprechenden Saftkonzentraten ermittelte, praktisch nur von Furaneol determinierte Aromastoffzusammensetzung zu finden. Die geprüften Direktsäfte – sieht man von ihren vergleichsweise hohen Acetoinanteilen ab - zeigten fruchtähnliche Aromaprofile. 2-Ethylhexansäure (2-EHA) wurde als technologiebedingte Kontaminante in Fruchtsäften und Babynahrung festgestellt. In 80% bzw. 73% der geprüften Babynahrung- und Fruchtsaftproben – darunter auch Bio-Produkte - wurde die Substanz nachgewiesen. Die im Tierversuch als teratogen eingestufte Verbindung migriert aus den Deckel-Dichtungen der Glasverpackungen in das Lebensmittel. Orangensaft-Fertigprodukte wiesen im Vergleich zu authentischen 'single strength'-Proben einen niedrigeren Gehalt an Aromastoffen auf. Empfindliche Aromastoffe wie Ethyl-2-methylbutanoat und Z-3-Hexenal sind in den analysierten Handelsproben nicht mehr detektiert worden. Die Verbindungen Ethylbutanoat, Hexanal und Z-3-Hexenal wurden nur im Essenzöl von Orangen nachgewiesen, nicht aber in Schalenölproben. Eine eindeutige Unterscheidung von (wertvollem) Orangen-Essenzöl und (geringwertigerem) Orangen-Schalenöl ist derzeit ausschließlich anhand von HRGC-MS ermittelter Aromaprofile nicht möglich. Um 13C-markierte Standards zur Stabilisotopenverdünnungsanalyse (SIVA) zu erhalten, wurden entsprechende Synthesen für die wichtigen Komponenten des Orangenaromas, Limonen und a–Terpineol, durchgeführt. Mittels SIVA ist es möglich, diese Verbindungen in Orangensäften, aber auch in Kosmetika exakt zu quantifizieren. Als Hauptkomponenten des Aromaprofils von Apfelsäften und Recovery-Aromen sind die Verbindungen 1-Butanol, 1-Hexanol, E-2-Hexenal, E-2-Hexenol und Butylacetat bestätigt worden. Das produzierte Saftkonzentrat enthält neben Erhitzungsprodukten wie Furfural keine charakteristischen Apfelaromastoffe mehr. Das ubiquitäre Auftreten in allen industriell frisch gepressten Apfelsäften von 3-Methyl-1-butanol und dessen Acetat, beides bekannte Indikatoren für Gärprozesse, scheint technologisch schwer vermeidbar zu sein. Die große Spanne von 0,01 mg/l bis 2,1 mg/l 3-Methyl-1-butanol in Apfelsaft macht aber deutlich, dass sich der Gehalt an fermentativ gebildeten Komponenten während der Fruchtsaftverarbeitung durchaus gering halten kann. Eine legislative Regulierung zum Vorkommen dieser Stoffe in Apfelsaft ist erforderlich. Bei der destillativen Recovery-Aroma-Gewinnung aus Apfelsäften zeigte sich die Tendenz einer leichten Abreicherung der d2HV-SMOW–Werte von Saft zu korrespondierendem Destillat. Anhand von Korrelationen der ermittelten 13C/12C- und 2H/1H-Daten von 1-Hexanol, E-2-Hexenal und E-2-Hexenol wird deutlich, dass eine Authentizitätsbewertung aber von diesem marginalen Effekt nicht berührt wird. Die Spuren an Fremdaromen zeigen, dass es unter der technologisch üblichen Produktions- und Reinigungspraxis zu Kontaminationen von artfremden Aromastoffen im Verlauf der Fruchtsaftherstellung kommen kann. Die Kombination aus ermittelten Schwellenwerten von 'carry-over'-Aromastoffen und deren tatsächliches Auftreten in Fruchtsäften zeigte, dass keine sensorische Beeinträchtigung der Produkte vorliegt. Ein höheres Potential, Produkte negativ zu beeinflussen, bergen die in Orangensäften in relevanten Gehalten nachgewiesenen 'off-flavour'-Komponenten a–Terpineol und Carvon. ; The aim of this study was to elucidate technologically caused changes in the profile of volatile components during fruit juice processing. In addition, the occurrence of 'carry-over' aroma compounds foreign to the species and their influence on the aroma profile should be evaluated. For this, authentic samples from different stages of the fruit juice processing, i.e. 'single strength'-juices, recovery aromas, and fruit juice concentrates, were provided by the Schutzgemeinschaft der Fruchtsaftindustrie (SGF). Included were also industrial semi-finished products and fruit juices purchased in supermarkets, to define variations from the authentic profile. The most important species used for fruit juice processing (apple, orange, pineapple, peach, and passion fruit) were considered. The determination of aroma profiles was carried out by a validated qualitative and quantitative aroma analysis. Aroma compounds were separated and enriched by simultaneous distillation-extraction (SDE) and subsequently analysed by high resolution gas chromatography-mass spectrometry (HRGC-MS). Using sensory tests the thresholds of selected 'carry-over'-compounds and off-flavour-components in five different matrices were determined. Summarizing, the following informations were acquired: The obtained aroma profile of pineapple fruits corresponded to a large extent with that described in the literature. Whereas the recovery aromas accorded, in part, with the profile of the fresh fruit, the pineapple juices made from concentrate showed an aroma profile that was similar to the aroma composition of juice concentrates. These were essentially dominated by furaneol. The commercial 'single strength'-juices under study exhibited, apart from high amounts of acetoin, fruit-like aroma profiles. 2-Ethylhexanoic acid (2-EHA) was found as technological contaminant in fruit juices and baby foods. In 80% of the baby food and 73% of the fruit juice samples under study – among them products labelled 'organic' – this substance was identified. Being known as teratogenic and potent carcinogeric compound for rodents, 2-EHA migrates from the plastic askets inside the metal lids into the food. Commercial orange juices contained lower amounts of aroma compounds compared to authentic 'single strength'-juices. Sensitive volatile components like ethyl 2-methylbutanoate and Z-3-hexenal were not detected in the commercial orange juices under study. The substances ethyl butanoate, hexanal and Z-3-hexenal were determined only in orange essence oil but not in any orange peel oil. An unambiguous differentiation between the high priced orange essence oil and the less valuable orange peel oil is not possible on the basis of HRGC-MS data to date. In order to obtain 13C-labeled standards for the stable isotope dilution assay, syntheses for important orange flavour compounds, i.e. limonene and a–terpineol were carried out. By means of these standards it was possible to quantify these substances in orange juices and cosmetics (limonene is one of the aroma compounds classified as allergenic and has to be declared on cosmetics containing a defined amount). The components 1-butanol, 1-hexanol, E-2-hexenal, E-2-hexenol, and butyl acetate were verified as main constituents of the aroma profile of apple juices and recovery aromas. Besides heating products such as furfural, the profile of the juice concentrates contained no characteristic apple aroma compounds. The ubiquitous occurrence of 3-methyl 1-butanol and its acetate, both known indicators for fermentation processes, seems to be technologically hard to avoid in industrial 'single strength'-juices. The wide range from 0.01 to 2.1 mg/l shows that the yield of 3-methyl 1-butanol can be minimized during fruit juice processing. Legislative regulations to determine limits of the presence of 3-methyl 1-butanol and its acetate in apple juice are necessary. Using distillative recovery of apple juice aroma the slight trend of a depletion of d2HV-SMOW values was observed from apple juice to the corresponding recovery aroma. The correlation of 13C/12C- and 2H/1H-values of 1-hexanol, E-2-hexenal, and E-2-hexenol showed that the authenticity assessment by stable isotope ratio-mass spectrometry is not affected by this negligible effect. The detected traces of 'carry-over' components indicate that contaminations of aroma compounds can occur under normal fruit juice production conditions. However, the combination of determined thresholds and the real amounts of the substances in fruit juices showed that the commercial products are not influenced in their sensory quality. 'Off-flavour' components of orange juices, i.e. a–terpineol and carvon, possess with their relevant amounts an increased potential to affect the taste and odour of commercial products.
