本論文主要研究香港殖民地時期由 1843 年至 1926 年的通訊歷史,目的是要補足現有關於大英帝國、英國殖民地史及香港史研究的不足。此研究指出,傳送港督的公文往英國殖民地部是一耗時過程,並是香港與英國殖民地部之間通訊的一個持久問題。電報的出現令雙方之間的通訊更為有效;藉著電報,殖民地部除了能更有效地得知香港的最新情況,並能更緊密地監察香港政府的施政。本研究亦分析殖民地部與港督之間通訊的 "資訊層次",這 "資訊層次" 由殖民地部頒布的規例所構建。透過統計結果,作者辯指除了電報外,機密和高度機密公文也是英國帝國對殖民地管治的 "神經系統" 中的重要成份。我們對不同公文的利用、其底層規則及殖民地部對港督公文的核准與否的研究,可以揭示英政府與總督之間的權力關係,並透視帝國和其殖民地之有意識和潛意識的焦慮。 ; This study investigates into the communication history of Hong Kong from 1843 to 1926 in the colonial period. It aims to fill the gaps as seen in previous studies of the British Empire, British colonialism and the history of Hong Kong. The study has found that the time-consuming process of conveying official despatches to the Colonial Office posed persistent problems for both the Governors of Hong Kong and the Secretary of State in the United Kingdom. With the advent of the telegraph, however, more efficient communication between the counterparts was achieved. The Colonial Office was thus equipped with an efficient means for instant updating of the situation in Hong Kong as well as close monitoring of the administration of the Hong Kong government. Our study also analyses the "information order" existed within the correspondence between the Colonial Office and the Governors, which was considered to be framed by the rules and regulations imposed by the Colonial Office. 在香港的英屬殖民時期,"混血兒(Eurasian)被限定為一個特別的種族分類。其身份在殖民主義和種族主義的多重迫力下被限定和汙名化,其社會境遇一路荊棘,深受社會道德機制的譴責與排斥。然而,在當代香港的後殖民語境中,混血兒的境遇發生了戲劇性的變化。"混血兒作為"種族分類(racial category)已然消失,現在則普遍以一種美化的象徵性身份(emblematic identity)概念而存在。人們對混血兒的認識亦脫離了種族與階級背景,而更多地建立在一種文化想像上。它甚至成為了"國際化的代名詞和"優生的標準之一,被媒體審美刻板化及商品化。本文觀察了香港混血兒在殖民時期與後殖民時期中的境遇變遷,通過研究"混血兒概念的建立、消失、和回潮,剖析"種族(race)是如何在不同語境中被建構的,並試圖解構種族理論、種族主義的政治、社會與文化淵源。 ; Within Hong Kong, the term "Eurasian once designated a stigmatized racial category, a group of "natural aberrations that were positioned in an embarrassing social niche within colonial society. As a consequence of this, Eurasians experienced severe racism and intense social pressures. In keeping pace with the end of colonialism and the rise of the new global capitalist order, the racial category of "Eurasian has been abandoned. However, somewhat surprisingly, the status of Eurasians in this day and age has been dramatically reversed. It now only exists as a descriptive term for a desirable physical type, which is assumed, to some extent, to be emblematic of "natural beauty. Being "Eurasian has now become a locally imagined "superior result of reproduction. By examining the creation, decline, and recent rebirth of the concept of "Eurasian, I hope to raise several important questions about race. Applying historical research to the construction of race requires analysis of how shifting political and social power dynamics have shaped the realization and so-called "authenticity of the "Eurasian category. 這項研究是以民族誌描述方法,以南中國傳統的原生牛奶和現代的進口牛奶之生產及消費切入點,探討現代性的問題。對近代中國奶品需求急增的研究,大多解釋為現代西方食習慣之影響。我透過在順德及香港牛奶生產者及消費者日常生活的描述,試圖說明這食習慣的改變並非單是「西化」;相反,這其實是中國傳統的一種延續,再由殖民主義、資本主義,全球化,及中國建構新型國家這四種動力驅使下形成。而這四種動力又有賴市場 (本地及跨國的乳品公司、財金投資者、食品包裝生產商等) 、醫科專業人士及政府對 「健康」、「飲食文化遺產」等概念賦予新的社會價值。本文嘗試透過傳統和現代的牛奶之生產及消費,審視現代中國人對「健康」和「飲食文化遺產」的觀念和價值,在近年食品安全問題的陰霾下如何改變,這又如何反映中國在現代化和新型國家建構過程中的社會變遷,並探究有關身份認同,家庭角色與現代性的意涵。 ; This thesis is an ethnographic study of the change in the production and consumption of indigenous and imported cow milk in South China, particularly Shunde and Hong Kong, during the post-Mao period. Contrary to the popular view that cow milk consumption in China is a result of Western influence, the milk production and consumption in South China is actually a continuation of the Chinese tradition. This thesis shows that the popularity of milk consumption in Shunde and Hong Kong is driven by the forces of colonialism, globalization, capitalism, and modern state-building. Milk consumption in these two places is mainly promoted through three kinds of agents - the market (global and local milk companies, financial investors, food-packaging companies), medical professionals and the State. I illustrate how these forces and agents affect the classification, meanings and values of health and culinary heritage, and how this results in a reinvention of tradition and a change in the concept of morality, amidst concerns over food safety.
