這項研究是以民族誌描述方法,以南中國傳統的原生牛奶和現代的進口牛奶之生產及消費切入點,探討現代性的問題。對近代中國奶品需求急增的研究,大多解釋為現代西方食習慣之影響。我透過在順德及香港牛奶生產者及消費者日常生活的描述,試圖說明這食習慣的改變並非單是「西化」;相反,這其實是中國傳統的一種延續,再由殖民主義、資本主義,全球化,及中國建構新型國家這四種動力驅使下形成。而這四種動力又有賴市場 (本地及跨國的乳品公司、財金投資者、食品包裝生產商等) 、醫科專業人士及政府對 「健康」、「飲食文化遺產」等概念賦予新的社會價值。本文嘗試透過傳統和現代的牛奶之生產及消費,審視現代中國人對「健康」和「飲食文化遺產」的觀念和價值,在近年食品安全問題的陰霾下如何改變,這又如何反映中國在現代化和新型國家建構過程中的社會變遷,並探究有關身份認同,家庭角色與現代性的意涵。 ; This thesis is an ethnographic study of the change in the production and consumption of indigenous and imported cow milk in South China, particularly Shunde and Hong Kong, during the post-Mao period. Contrary to the popular view that cow milk consumption in China is a result of Western influence, the milk production and consumption in South China is actually a continuation of the Chinese tradition. This thesis shows that the popularity of milk consumption in Shunde and Hong Kong is driven by the forces of colonialism, globalization, capitalism, and modern state-building. Milk consumption in these two places is mainly promoted through three kinds of agents - the market (global and local milk companies, financial investors, food-packaging companies), medical professionals and the State. I illustrate how these forces and agents affect the classification, meanings and values of health and culinary heritage, and how this results in a reinvention of tradition and a change in the concept of morality, amidst concerns over food safety. 本研究探討深思的可能性模型(Elaboration Likelihood Model)在設計推廣使用營養標籤的廣告中的適用性。香港的一所中學的169位學生參與了一個2 x 2 x 3(健康意識:高vs. 低 x 論據:數據 vs. 經驗 x 代言人:專家vs. 名人 vs. 普通人)的實驗。 部分假設得到支持。 健康意識的主效果明顯。 具有較高健康意識的青少年更易被廣告說服。 健康意識和代言人具有交叉效應。對於健康意識較高的人來說,營養師更有說服力, 而對於健康意識較低的人來說,名人更有影響力。論據和代言人的搭配影響了資訊的處理路徑。如果以數據為主的論據是由普通人提供的,則更易推動青少年使用營養標籤。而如果以個人經驗為主的論據是由名人提供的,則更有效。統計結果將在深思的可能性模型下得以展開討論。 本文還會對開展針對青少年的公共健康傳播運動提出建議。 ; This study tested the utility of the Elaboration Likelihood Model in creating effective Public Service Announcements (PSAs) of nutrition label use. Students (N=169) from a secondary school in Hong Kong participated in a 2x2x3 (Health consciousness: High vs. Low x Argument: Informational vs. Testimonial x Source: Expert vs. Celebrity vs. Ordinary Person) factorial design experiment. Hypotheses were partially supported. Main effect was located for health consciousness. Adolescents with high health consciousness were more persuaded by the PSAs. There was an interaction effect between health consciousness and source. A dietitian as the source was most persuasive to people with high health consciousness, while low health conscious people were most influenced by a celebrity. The information processing route was biased by the match of argument and source. Informative argument made by an ordinary person was more likely to motivate adolescents to use nutrition label, while testimonial argument made by a celebrity was the most effective. The findings are discussed in light of ELM and match-up hypotheses. Rural-urban linkages—including physical, economic, social, and political connections—are crucial for ending hunger and malnutrition (SDG 2) sustainably in both rural and urban areas. Rural-urban linkages also support other Sustainable Development Goals. Urban growth increases food demand and spurs dietary changes in urban areas—new demand can create opportunities for rural producers to improve their livelihoods. Broken value chains and poor coordination weaken rural-urban links and hold back progress on food security and nutrition. Investment in rural infrastructure and intermediate towns—quality rural and feeder roads, electricity, storage facilities, communications and information—can build connections and create hubs of economic activity benefiting smallholders and cities. ; PR ; IFPRI1 ; DGO; CPA

With more than 700 million residents living in rural areas, China is still a predominantly rural country. But despite substantial improvements in standards of living, the Chinese countryside is largely lagging behind. This report analyzes the key socio-economic forces at work in China's rural areas and discusses the current government strategy for rural development. It argues that in order to bridge rural-urban divides the current policy approach needs to go further in recognizing rural-urban complementarities beyond agriculture and that food-security targets need to be balanced with wider rural development objectives.--Publisher's description
