Los estudios sociales sobre alimentación y las autoridades responsablesde este campo coinciden en resaltar la situación paradójica delcomensal actual: se sabe cómo se debe comer pero no se come comose debe. Enfrentarse con éxito a las paradojas suele requerir un ciertodistanciamiento —lingüístico y disciplinar— que ofrezca la sufi cienteperspectiva. Aquí se propone hacerlo desde la perspectiva histórica queuna sociología de la utopía puede aportar al confl icto entre imaginariosalimentarios. Para ello, este artículo revisará los elementos comunesdel pensamiento utópico/distópico en orden a extraer las categorías demayor interés para un análisis sociológico de las políticas y comportamientosalimentarios. Después, recorreremos los modos en que algunasde las utopías clásicas han enfocado —o desenfocado— la cuestión dela comida e intentaremos sacar algunas conclusiones.
[EN] If, as Wittgenstein has already put it, the meaning of a word is in its use in language, the diversity of meanings acquired by 'eating out' is a function of different ways of understanding and living the food as expressed in the speech of the diners. Exploring those meanings of 'eating out' is the purpose of this paper. The socio-hermeneutic analysis used allows us to verify how the meaning of 'eating out' is not a given, but is concretized in the ways in which the subjects - the diners - endow it with one meaning or another, in the ways in which they alter meaning within a certain socio-cultural context. Eating out acquires its meaning in the context of interaction and negotiation with a multitude of circumstances and contexts, always personal and always unavoidable, because you never eat in abstract situations. ; Herrera-Racionero, P.; Lizcano-Fernández, E. Esta paradoja del comensal actual es objeto de debate entre sociólogos, nutricionistas y responsables de salud. Las difi cultades para afrontarla sugieren ensayar aproximaciones diferentes a las habituales. Pensar el comer desde los imaginarios colectivos que pueden entrar en colisión quizá arroje nueva luz sobre dicha paradoja. Aquí ensayamos ese acercamiento a partir de cuatro textos canónicos de la literatura utópica en los albores de la revolución industrial. Su análisis revela un confl icto de larga duración entre dos modos de imaginar la comida ideal: el de las utopías modernas e ilustradas, que comparten los expertos en nutrición, y el de las utopías populares, donde una cierta racionalidad social, basada en los hábitos y tradiciones culinarias, se opone a una alimentación racional. ; [EN] We know how we should eat but we don't eat as we should. This paradox of the modern eater has long been the subject of debate amongst sociologists, nutritionists and healthcare workers. The difficulties faced when dealing with this paradox suggest the need for new approaches. By considering food from the potentially conflictive social imageries, it may be possible to shed some light on this paradox. Students and teachers of environmental sciences and other related engineers often perceive the need for sociological approximation to the content of their research disciplines and projects, but lack basic guidelines to enable them to embark on this approximation and possibly feel encouraged to deepen it. The aim of this text is to provide this basic guide and stimulus, showing the symbolic and disitalical dimension of all approaches to environmental issues and presenting the roudiments of qualitative methodologies for analysis, with particular emphasis on different techniques for analysing the speeches on these topics. Los estudiantes y profesores de ciencias medioambientales y otras ingenierías afines perciben, con frecuencia, la necesidad de una aproximación sociológica a los contenidos de sus disciplinas y proyectos de investigación, pero carecen de unas orientaciones elementales que les permitan emprender esa aproximación y, tal vez, sentirse estimulados para profundizar en ella. [EN] Despite the potential of Spanish ports, fishing tourism has not finished implanted in our country. Once the legislative problems were solved, the attitude of fishermen of this activity seems one of the key issues that will determine its success or failure. This paper focuses on analysing the fishermen¿ perception about fishing-tourism, specifically on the opportunities and threats they perceive. We have carried out a qualitative study based on in-depth analysis of 32 interviews with fishermen in the Valencia region (Spain) ; [ES] A pesar del potencial de los puertos españoles, la pesca-turismo no acaba de implantarse en nuestro país. Solucionados, en principio, los problemas legislativos, la actitud de los pescadores frente a esta actividad parece uno de los asuntos clave que determinará su éxito o fracaso. Este trabajo se centra en analizar la percepción que los pescadores tienen de la pesca-turismo, concretamente, en las oportunidades y amenazas que perciben. [EN] Recent European policy highlights the need to promote local fishery and aquaculture by means of innovation and joint participation in fishery management as one of the keys to achieve the sustainability of our seas. However, the implicit assumptions held by the actors in the two main groups involved - innovators (scientists, businessmen and administration managers) and local fishermen - can complicate, perhaps even render impossible, mutual understanding and co-operation. A qualitative analysis of interviews with members of both groups in the Valencian Community (Spain) reveals those latent assumptions and their impact on the respective practices. The analysis shows that the innovation narrative in which one group is based and the inventions narrative used by the other one are rooted in two dramatically different, or even antagonistic, collective worldviews. [EN] Industrial aquaculture has become one of the main protagonists both on the coasts and in international policy aimed at regulating matters concerning the sea. This new role is reflected in the recently adopted Common Fisheries Policy of the European Union, where the need to promote the sector and the involvement with other local actors, specifically artisanal fishers, is highlighted. However, the official promotion of this activity could be overvaluing its benefits while, at the same time, undervaluing the new barriers that it is introducing in fisheries co-management. Centered in Valencian Community (Spain) and through a qualitative methodology, this paper examines the views and positions of stakeholders directly involved in aquaculture activity (biologists, aquaculture businessmen and policy managers) on the possibilities of joint participation.
